about 8-9 years ago, my daughter and I overheard a fireman telling the butcher about this recipe, sounded so easy and quick, we promptly made it and it's been a favorite since. HOWEVER, my hubby doesn't care for the rice so I always make him some plain rice seperate. The best part about this recipe is you can increase or decrease it depending on your needs.

4 chicken breasts, cut into bite size pieces
2 cups rice (uncooked)
1 -2 cup barbecue sauce (use your favorite)
1 -2 cup Pepsi (diet does NOT work)

Steps:

  • In a skillet, cook the chicken until no longer pink.
  • Put the rice in a 4 quart casserole.
  • Spoon the chicken over this.
  • Mix equal parts BBQ sauce and Pepsi.
  • I always keep plenty as depending upon how much rice you use, will need to add more.
  • Pour this mixture over the rice/chicken.
  • Put into oven and slow cook at 250 for 3-5 hours.
  • Keep checking and ADDING MORE LIQUID as needed, otherwise the rice will not be tender.
  • Make sure to stir occasionally.

4 medium carrots (about 12 ounces), sliced into 1/4-inch rounds
3 stalks celery (about 9 ounces), sliced 1/4-inch thick
2 large shallots (about 4 ounces), finely diced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves, chopped
1 tablespoon fresh oregano leaves, chopped
2 teaspoons finely grated lemon zest plus 1 tablespoon lemon juice
1 cup long-grain rice
4 cups low-sodium chicken stock
1 tablespoon chopped fresh chives

Steps:

  • Preheat the broiler. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Toss the chicken with the paprika, 1 teaspoon salt and a few grinds of pepper in a large bowl. Place the chicken skin-side down in the skillet and cook undisturbed until the skin is golden but not too dark, 4 to 5 minutes. Stir in the rice and cook undisturbed until lightly toasted, about 2 minutes. Pour in the broth, add 1/2 teaspoon salt and stir to combine, then add the chicken thighs back to the pan, skin-side up. 1 can(s) pepsi (diet or regular)
1 pkg 12-16 leg's or wings (family pack)

  • 1. Rinse raw chicken with water
  • 2. Set aside rinsed chicken

You can easily vary this dish by using any stock instead of water; by substituting another grain, like pearled barley, for the rice; by sautéing or roasting the chicken separately and combining it with the rice at the last minute; by adding sausage or shellfish, like shrimp, along with the chicken, or, most excitingly, by adding strips of red pepper, pitted olives, capers, chopped tomatoes or shelled peas to the initial onion mix.
