2 tablespoons chopped fresh basil, divided
3/4 teaspoons kosher salt
12 multicolored baby bell peppers, halved lengthwise, seeds removed

Steps:

  • Preheat oven to 400°. Line a baking sheet with parchment paper.

3/4 c flour
3/4 c milk
1 egg
3/4 tsp baking powder
4 oz pepperoni, diced
2 oz shredded mozzarella
2 oz shredded cheddar cheese
1/2 tsp dried basil or italian seasoning
warmed pizza sauce for dipping

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. In a bowl add the flour and baking powder. Stir in the milk and the beaten egg. Add mozzarella, basil and pepperoni.
  • 3. Spray a 24 count mini muffin pan with cooking spray. ( or two 12 count muffin pans ).
  • 4. Spoon even portions, about 1 teaspoon per muffin cup.

8 ounces cream cheese, at room temperature
1/2 cup finely chopped pepperoni, sauteed
1/4 cup grated parmesan cheese
1/2 teaspoon diamond crystal kosher salt

  • Heat the oven to broil and arrange a rack in the middle. Line a baking sheet with aluminum foil and set aside.
  • Lay a jalapeño on your work surface so that it sits flat without rolling. Make two cuts forming a "T" by first slicing down the middle of the chile lengthwise from stem to tip, then making a second cut perpendicular to the first about 1/4 inch from the stem, slicing only halfway through the chile (be careful not to cut off the stem end completely). Carefully open the flaps to expose the interior of the chile, and, using a butter knife or small measuring spoon, scrape the inside to remove the seeds and ribs. Repeat with the remaining peppers; set aside.

4 to 4-1/2 cups all-purpose flour
1/3 cup sugar
1 package (1/4 ounce) active dry yeast
1 teaspoon dried oregano
1/2 teaspoon salt
1 cup water
1 tablespoon shortening
1 large egg
3 cups shredded part-skim mozzarella cheese
1-1/3 cups minced pepperoni (about 5 ounces)
2 cups pizza sauce, warmed
