I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

Tips:

- Use high-quality peppermint extract for the best flavor. - If you don't have a candy thermometer, you can test the sugar syrup by dropping a small amount into a glass of cold water. If it forms a soft ball, it is ready. - Be careful not to overcook the sugar syrup, or it will become too hard. - Allow the chocolate mixture to cool slightly before adding the peppermint extract. This will help prevent the extract from evaporating. - Work quickly when dipping the marshmallows in the chocolate mixture. The chocolate will start to set quickly, so you don't want to take too long. - Place the dipped marshmallows on a parchment paper-lined baking sheet and refrigerate them until the chocolate is set. - Store the Snowdrifts in an airtight container in the refrigerator for up to 2 weeks.
