PEPPERED PINEAPPLE CHUTNEY

Provided by Florence Fabricant

Categories     condiments

Time 40m

Yield 4 cups

Number Of Ingredients 8

1 large pineapple, not too ripe
1 cup peeled and chopped onion
Juice and grated rind of two limes
1/4 cup cider vinegar
2 tablespoons dark rum
1 cup light brown sugar, packed
1 teaspoon black peppercorns, crushed
1/8 teaspoon ground clove

Steps:

  • Slice the crown of leaves off pineapple, quarter the fruit lengthwise, then slice out the fibrous core. Peel and dice the pineapple quarters.
  • Place pineapple in a heavy saucepan with the remaining ingredients, bring to a boil and cook over medium-high heat for 20 to 25 minutes, until most of the liquid has evaporated and the mixture is thick.
  • Transfer hot chutney to sterilized canning jars and seal according to manufactuer's directions, or store in containers in the refrigerator or freezer.

Tips:

  • Choose ripe and flavorful fruits: The quality of your chutney will depend on the quality of your ingredients. Use ripe, juicy papayas and pineapples for the best flavor.
  • Use a sharp knife: A sharp knife will make it easier to cut the fruits and vegetables into small pieces. This will help the chutney to cook evenly.
  • Don't overcook the chutney: Chutney is best when it is slightly chunky. If you overcook it, it will become too thick and jam-like.
  • Adjust the seasonings to taste: The amount of sugar, vinegar, and spices you add to the chutney will depend on your personal preferences. Taste the chutney as you go and adjust the seasonings accordingly.
  • Let the chutney cool before serving: Chutney is best served at room temperature. This allows the flavors to meld together and develop.

Conclusion:

Pepper papaya pineapple chutney is a delicious and versatile condiment that can be enjoyed in many different ways. It is perfect for adding a sweet and tangy flavor to grilled meats, fish, and vegetables. It can also be used as a dipping sauce for appetizers or as a spread for sandwiches and wraps. No matter how you choose to enjoy it, pepper papaya pineapple chutney is sure to be a hit!
