2 cups packed brown sugar
1 cup sugar
3/4 cup 2% milk
2 tablespoons light corn syrup
1/8 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine sugars, milk, corn syrup and salt. Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage). Remove from heat. Add vanilla and remaining butter to pan (do not stir)., Cool, without stirring, to 110°, about 40 minutes. Beat with a spoon until fudge just begins to thicken. Add walnuts; continue beating until fudge becomes very thick and just begins to lose its sheen (about 10 minutes total). Immediately spread into prepared pan. Cool., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in airtight containers.

1 ½ cups white sugar
1 cup brown sugar
⅓ cup half-and-half cream
⅓ cup milk
2 tablespoons margarine
1 teaspoon vanilla extract
½ cup pecan halves

Steps:

  • Butter a baking sheet. Butter the sides of a heavy, 2-quart saucepan.
  • In the saucepan, stir together white sugar, brown sugar, cream, milk and margarine and bring to a boil over medium heat. Heat, without stirring, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and cool to lukewarm (110 degrees).
  • Stir in vanilla and beat vigorously until mixture loses its gloss. Quickly stir in pecans and spread on prepared sheet. Score into squares while warm; cut when firm.

1 can (5 ounces) evaporated milk
1 1/2 cups packed light-brown sugar
5 ounces (1 1/4 sticks) unsalted butter
1/4 teaspoon salt
1/2 cup confectioners' sugar
1 teaspoon pure vanilla extract
3 ounces toasted walnuts, chopped (1 cup)

Steps:

  • Coat a 5-by-10-inch loaf pan with cooking spray. Line with plastic wrap leaving a 2-inch overhang on 2 sides.
  • Bring evaporated milk, brown sugar, butter, and salt to a boil in a medium saucepan, stirring constantly. Reduce heat to medium-low, and simmer, stirring frequently, until mixture registers 236 degrees on a candy thermometer, about 25 minutes.
  • Transfer to a mixer bowl, and beat in confectioners' sugar on low speed. Scrape down sides of bowl as needed. Increase speed to medium, and beat until mixture is thickened and smooth, 2 to 4 minutes. Reduce speed to low, and add vanilla and walnuts.
  • Spread mixture in pan, smoothing top. Refrigerate, uncovered, until firm, about 25 minutes. Unmold fudge using plastic overhang, and discard plastic. Cut into 18 pieces.

1 cup half-and-half
2 tablespoons butter
2 cups packed brown sugar
1 cup granulated sugar
2 teaspoons vanilla
1 cup chopped pecans

Steps:

  • Butter an 8inch square pan;set aside.
  • Combine Half-and-Half, butter, brown sugar, and granulated sugar in a medium saucepan.
  • Cook over medium heat, stirring constantly until sugar dissolves and mixture comes to a boil. *Note: if sugar gets on the side of the pan, get a small bowl of water and a pastry brush and wipe down the sides.
  • Add the candy thermometer (bulb of thermometer should not touch the bottom of the saucepan). Continue to cook until mixture reaches the soft-ball stage (238 degrees F).
  • Pour into large heat-proof mixer bowl.
  • Cool until lukewarm (about 110 degrees F). Don't stir it!
  • Once it gets to the right temperature, add vanilla and beat with electric mixer until thick and candy looses it's gloss.
  • Beat in pecans.
  • Spread into prepared pan and refrigerate until firm.
  • Cut into squares then store in refrigerator.

  • In a medium sauce pan combine 1/2 cup dark brown sugar, 3 tbls butter and bring to a boil.
  • Add maple syrup and cook over medium heat for 1 minute or until slightly thickened, stirring constantly!
  • Let cool 10 minutes.
  • Add cream; and beat until smooth.
  • Beat in powdered sugar gradually until desired consistency for frosting.
  • Frost cooled cookies and keep in single layer in an air tight container to keep moist and fresh--that is if they last that long!

  • In a mixer bowl, sift flour, white sugar, powder, soda, salt and spices.

  • Add eggs, and beat another and final two minutes.

  • Bake 350 degrees for 30 minutes, until tester shows done.

  • In saucepan melt the half cup butter and stir in the one cup brown sugar.
  • Cook until dissolved and boil for two minutes.
  • Remove from heat and add the quarter cup evaporated milk.
  • Return to heat and return to boiling point stirring constantly.
  • Remove from heat.
  • Cool to lukewarm.
  • Beat in 1 3/4 to 2 cups powdered icing sugar.
  • If its too thick add in a few tablespoons more milk little at a time.
  • If its too thin add in more icing powder a little at a time.
  • When to your desired spreading consistency, fill and frost cake.

1 c packed brown sugar
2 c sugar
1 c milk
3 Tbsp butter
1 1/2 tsp good vanilla
1 dash(es) pecans, coarsely chopped

  • 1. In a 3 quart saucepan combine the sugars and milk. Bring to a boil over medium heat, stirring constantly. Continue cooking without stirring until the mixture reaches the soft-ball stage (237 degrees F on a candy thermometer).
  • 2. Remove from heat. Add the butter and vanilla, but do not stir. Let the mixture cool without stirring until it reaches 110 degrees F. and the outside of the pan feels lukewarm, about 40 minutes. While the mixture is cooling, butter and 8-inch square pan.
  • 3. With a wooden spoon beat the mixture until it becomes thick and begins to lose its gloss. Quickly stir in the pecans, and pour into the pan. Don't scrape the sides, since they may be sugary. Cut with a sharp knife into 1 1/2 inch squares.

  • Holding foil ends, carefully lift candy to cutting board.
  • Peel off foil.
  • Cut candy in 1 inch squares.
  • Store tightly covered in a cool place.

This is a very nice cake recipe and you will be surprised how rich and moist the texture is. This recipe is from one of my friends on Beaver Island,Michigan. She used cream cheese frosting-I prefer the penuche frosting.

CAKE
2/3 c soft butter
1 1/4 c granulated sugar
1 c brown sugar,packed
3 large eggs
1 3/4 c unsweetened applesauce
1/2 c water
3 c all purpose flour
1/2 tsp baking powder
2 tsp baking soda
1/4 tsp each nutmeg and cloves
1 1/4 tsp cinnamon
1/2 tsp allspice
1/4 tsp salt
1 1/2 c chopped walnuts
1 c chopped raisins,optional
PENUCHE FROSTING
1 1/2 c brown sugar, firmly packed
6 Tbsp milk
6 Tbsp oleo (margarine or butter)
1 pinch salt
2 Tbsp peanut butter, creamy
1/2 tsp vanilla extract

Steps:

  • 1. Note: If you don't have all the spices you can just use 2 1/4 teaspoons of pumpkin pie spice in place of all the spices. Also this can be made in a 15x10-inch pan for bars.Bake these for 20 to 30 minutes, checking with a toothpick for doneness.
  • 2. Heat oven to 350^ grease and flour the baking pan you wish to use or spray with non-stick oil. --- Sift together the dry ingredients ,except the sugars and set aside. Cream together in a large mixer bowl the butter and sugars, until smooth and fluffy; add eggs. Mix well then add applesauce, mixing to blend. Stir in sifted dry ingredients ;alternating with the water (sometimes I use dairy sour cream instead of the water).
  • 3. Stir in the nuts and raisins if using,or you can use craisins. Pour into prepared pan of choice. Bake in 350^ oven for the time as listed above. Cake 45 to 55 minutes.Bars 20 to 30 minutes. Always test with a toothpick for doneness. Cool in pan on wire rack. Then spread with the frosting.
  • 4. Penuche Frosting Combine the sugar, milk, oleo and salt in a saucepan and bring slowly to a rolling boil, stirring constantly. Boil one minute. Remove from heat and add the remaining ingredients. Stir and cool until spreading consistency. If desired you can sprinkle chopped nuts on top of frosting.

8 tablespoons (1 stick) unsalted butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cups unbleached flour
1 cup oats, ground fine in a blender
1 tablespoon baking powder
1 teaspoon ground cardamom
1/2 teaspoon salt
1 cup milk
6 tablespoons unsalted butter
1/2 cup firmly packed light brown sugar
1 1/2 tablespoons milk
1 cup confectioners sugar
1/2 teaspoon vanilla extract
1/3 cup very finely ground pecans or walnuts

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 9inch springform pan. In a large mixing bowl cream the butter with an electric mixer until soft. Add the sugar and beat until well blended. Add the eggs and vanilla and beat until light and very fluffy.
  • Thoroughly combine the flour, ground oats, baking powder, cardamom, and salt in a medium bowl. Beat these ingredients into the butter mixture, alternating with the milk, until well blended. Scrape into the prepared pan and smooth the top. Bake 50 to 55 minutes, or until a knife inserted in the center of the cake comes out clean. Do not overcook. Cool on a wire rack 15 minutes, then loosen the edges of the cake, invert onto a platter, and invert again onto the rack so the cake is right side up. Let the cake cool completely, about 2 hours.
  • When the cake is cool, make the frosting: In a small saucepan melt the butter over medium low heat. Add the brown sugar and stir until melted and blended with the butter. Slowly pour in the milk, mix well, and bring the mixture to a boil. Scrape it into a medium bowl and cool 10 minutes. Add the confectioners sugar and vanilla and beat with an electric mixer until smooth. Spread all over the cooled cake. Decorate the cake by sprinkling the ground nuts on top, leaving a 3/4-inch border bare. Wait at least 15 minutes before serving to allow the frosting to set

PENUCHE WALNUT FUDGE

This is a family favorite, especially with my grandchildren. I usually make them a stocking filled with homemade goodies every year at Christmas. This is definitely their favorite. So rich and wonderfully good.

2 1/2 c light brown sugar, firmly packed
3/4 c evaporated milk
1 pinch salt
1 Tbsp butter
1/2 tsp vanilla
1 tsp light corn syrup
3/4 c chopped walnuts

Steps:

  • 1. Line a 9x9 pan with foil or parchment paper with the ends overhanging for easy removal of fudge.Place all ingredients in heavy saucepan (except vanilla and nuts). Boil 19 minutes from the time it starts to boil; do not stir. Shake pan occasionally. Remove from heat and set pan in cold water. Add vanilla and nuts and beat until thick and penuche loses its gloss.
  • 2. Pour into prepared pan. Cut into about 16 pieces when set.

Tips:

  • Use fresh butter: Fresh butter will give your penuche a richer flavor than using margarine or shortening.
  • Don't overcook the sugar: Overcooked sugar will make your penuche too hard. Cook it just until it reaches a light amber color.
  • Add the milk and cream slowly: Adding the milk and cream too quickly can cause the penuche to curdle. Add them slowly and stir constantly.
  • Let the penuche cool completely before serving: This will allow it to set properly and develop its full flavor.
