PENNE WITH SUN-DRIED TOMATO PESTO AND CHICKEN
I saw this recipe being made on "Everyday Italian" on the food network. The original recipe did not call for chicken, but I think it needed a little meat to make it extra yummy. Enjoy!

PENNE WITH CHICKEN, SUN-DRIED TOMATOES AND PINE NUTS
This pasta dish looks and tastes great. It looks stunning served in bowls or large, restaurant-like plates. I love sun-dried tomatoes and fresh basil! The pine nuts add a nice touch. Roast the pine nuts in a skillet on low heat. Watch the nuts as they turn brown (and then black) suddenly. Serve this tasty dish with fresh parmesan cheese and a glass of wine.

Steps:

- Add garlic, tomatoes and cream. Cook on low heat for 4-5 minutes.
- Add cooked penne and basil and mix. Leave on stove until penne are warm.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for ripe sun-dried tomatoes, juicy chicken breasts, and a flavorful cheese like Parmesan or feta.
- Don't overcook the chicken: Chicken can quickly become dry and tough if it's overcooked. Cook it until it is just cooked through, about 5-7 minutes per side.
- Use a flavorful sauce: The sauce is what brings this dish together. Use a store-bought sauce or make your own using fresh tomatoes, sun-dried tomatoes, garlic, and herbs.
- Add some vegetables: Vegetables like spinach, broccoli, or zucchini can add color, flavor, and nutrients to this dish. Sauté them in a little olive oil before adding them to the pasta.
- Serve with a sprinkle of cheese: A sprinkling of Parmesan or feta cheese can add a finishing touch of flavor and richness to this dish.
Conclusion:
This penne with sun-dried tomatoes and chicken is a quick and easy weeknight meal that is packed with flavor. It's perfect for a busy weeknight dinner or a casual weekend lunch. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying meal on the table in no time.
