1/3 cup cocoa, plus
1 tablespoon cocoa
2 1/4 cups sugar
4 eggs
8 ounces evaporated milk
2 teaspoons vanilla
3/4 cup pecan pieces
2 unbaked pie shells

Steps:

  • Melt butter and blend in cocoa.
  • Mix cocoa mixture with sugar.
  • Add eggs and mix well.
  • Add milk and mix.
  • Add vanilla and mix.
  • Add pecans and mix.
  • Pour into unbaked pie shells (2).
  • Bake at 450 degrees for 10 minutes.
  • Reduce heat to 350 degrees and bake for 20 minutes or until set.

BROWNIE FILLING:
3 ounces unsweetened chocolate
1/2 cup chocolate chips
1/2 cup butter, cut into pieces
1-1/2 cups sugar
3 large eggs, room temperature
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1 cup chopped pecans
FUDGE FROSTING:
1-1/2 ounces unsweetened chocolate
2/3 cup sweetened condensed milk
1/4 cup butter
1 large egg yolk, beaten
1/2 teaspoon vanilla extract
Optional: Whipped cream and whole pecans for garnish

Steps:

  • Combine flour, brown sugar and nuts in a large bowl; cut in butter until mixture resembles coarse meal. Mix in milk and vanilla with a fork just until blended.   • Preheat oven to 350°F. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, 10-15 minutes. Let cool, then coarsely chop.
  • Meanwhile, butter loaf pan. Attach candy thermometer to a large heavy-bottomed pot or Dutch oven set over medium heat. Cook maple syrup, cream, and salt, whisking constantly, and bring to a boil. 1 cup raw pecans, chopped

Steps:

  • Spray 8-inch square pan with cooking spray.

1 cup pecans, chopped
1/4 lb butter
1 1/2 cups sugar
5 ounces evaporated milk
1 (12 ounce) package semisweet chocolate morsels
1 tablespoon vanilla
1 (7 ounce) jar marshmallow creme

Steps:

  • Line a 9-inch Pyrex dish in aluminum foil and set aside.
  • In a two quart heavy bottom pot, melt butter over medium-high heat.
  • Add sugar and evaporated milk and blend well into butter.
  • Bring to a rolling boil, reduce heat to simmer and cook approximately five minutes stirring constantly.
  • Be careful not to scorch butter as mixture will caramelize.
