CREAMED PEARL ONIONS

CREAMED PEARL ONIONS image

This has been on my holiday tables for many years. This can be made a day or two ahead of time and just heat and serve when you are ready. This makes a lot of sauce...but it's the best part. You can easily add green peas and mushrooms....or crumbled bacon? This can even be finished as a casserole with a bread crumb...

6 tablespoons all-purpose flour
3 cups milk
¾ cup chopped fresh parsley, or more to taste
¼ cup dry sherry
¾ teaspoon paprika
⅛ teaspoon ground cloves
salt and freshly ground black pepper to taste
3 tablespoons panko bread crumbs, or to taste

"CREAMED" PEARL ONIONS

Tender pearl onions melt in a flavorful sauce; reduced chicken stock and white wine, flavored with roasted garlic and thyme, take the place of cream.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 8

2 3/4 cups homemade or low-sodium canned chicken stock, skimmed of fat
3/4 cup dry white wine
1 1/2 pounds white pearl onions
5 tablespoons all-purpose flour
2 1/2 teaspoons fresh thyme leaves
1/4 teaspoon freshly ground pepper
1 head roasted garlic
2 tablespoons grated Parmesan cheese

Steps:

  • Place stock and wine in a medium pan over high heat. Reduce liquid by half; set aside.
  • Bring a medium saucepan of water to a boil. Add onions; cook 10 minutes. Drain, and cool. Using a paring knife, remove skins.
  • Place flour and reduced liquid in the bowl of a food processor. Pulse until combined.
  • Transfer mixture to a small saucepan; set over medium heat. Whisk constantly until thickened, about 10 minutes. Remove from heat. Stir in 1 1/2 teaspoons thyme and the pepper. Cut off top of garlic head, and squeeze flesh into the sauce; stir to combine.
  • Place onions and sauce in a 10-inch round baking dish. Sprinkle with Parmesan and remaining teaspoon thyme. Bake until golden on top, about 1 hour 15 minutes. Serve.

Tips:

  • Choose small onions: Smaller onions are more tender and cook more evenly.
  • Peel and trim the onions: Remove the outer layer of skin and trim the root ends of the onions.
  • Use a sharp knife: A sharp knife will help you make clean, even cuts.
  • Don't overcrowd the pan: Make sure there is enough space between the onions so that they can cook evenly.
  • Use a heavy-bottomed pan: A heavy-bottomed pan will help to distribute the heat evenly.
  • Cook the onions slowly: Cooking the onions slowly will help them to caramelize and develop a rich flavor.
  • Season the onions well: Salt and pepper are essential seasonings for pearl onions, but you can also add other herbs and spices to taste.
  • Serve the onions hot: Pearl onions are best served hot, as a side dish or as a garnish.

Conclusion:

Pearl onions are a versatile and delicious vegetable that can be used in a variety of dishes. They are especially popular in French cuisine, where they are often used in soups, stews, and casseroles. Pearl onions can also be used as a garnish for meat, fish, and poultry dishes. With their mild flavor and delicate texture, pearl onions are a great way to add a touch of elegance to any meal.
