⅔ cup superfine sugar

1 (16 ounce) can sweet potatoes, drained and cut into chunks
4 cups French bread cubes
⅓ cup packed light brown sugar

Steps:

1/2 cup raisins
1/4 cup rum (or 1 tsp rum extract & water)
2 cups pears, peeled, sliced, ripe
1/2 cup sugar
4 cups bread, white, coarsely torn with no crusts
3 cups milk
3 eggs
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Heat rum mixture and pour over raisins; set aside.
  • Melt 1 tablespoon butter in frypan, add pears and cook 5 minutes.
  • Add 1/4 cup sugar, stir and cook 2 more minutes and then put aside.
  • Place bread in bowl.
  • Scald milk and pour over bread.
  • Let soak 5 minutes.
  • Add raisin mixture and pears with syrup.
  • Beat together eggs, rest of sugar, vanilla and stir in bread mixture.
  • Pour in buttered baking dish, bake at 350°F for 50 minutes.

1 egg
1 cup bosc pear, pureed (about 1 1/2 pears)
1 cup unbleached all-purpose flour

1/4 teaspoon salt
1 teaspoon vanilla
3 ounces crystallized ginger, cubed
1 cup finely chopped walnuts

Steps:

  • Core the pears (there's no need to peel the fruit) and purée it well in a blender or food processor.
  • In a large mixing bowl, cream together the sugar and butter, then add the egg, beating till smooth.
  • Add the pear purée, flour, ground ginger, baking soda, baking powder, salt and vanilla. Beat till smooth.
  • Stir in the candied ginger and nuts.
  • Spoon the batter into an 8 1/2 x 4 1/2-inch loaf pan.
  • Bake in a preheated 350°F oven for 55 minutes to 1 hour, or until a cake tester inserted into the center of the loaf comes out clean.
