2 eggs, at room temperature
1 cup mashed banana
1/2 cup buttermilk, at room temperature
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda

  • Preheat the oven to 200 degrees F.
  • Whisk together the cream, milk, nutmeg and eggs in a bowl. Working in batches, soak the banana bread slices in the mixture.

  • In a stand mixer with the paddle attachment, cream the sugar and butter until light and fluffy, about 5 minutes. Add the eggs one at a time, scraping down the sides of the bowl between additions.
  • Combine the banana, buttermilk and vanilla in a bowl. Sift together the flour, baking soda, cinnamon, salt and cloves in a second bowl. Add half of the flour mixture to the butter mixture and paddle just to combine. Scrape down the sides and then add the buttermilk and banana mixture. Scrape down again, and add the remaining flour until just combined uniformly.
  • Pour the batter into the prepared loaf pan and bake on the center rack until a toothpick inserted in the loaf comes out clean, 50 minutes to an hour, depending on your oven. Let cool for about 10 minutes, then remove from the pan to cool completely.
  • Whisk the cream to medium peaks and set aside.
  • In a stand mixer with the paddle attachment, cream together the cream cheese, peanut butter, sugar, salt and vanilla, scraping down the sides of the bowl halfway, until the mixture is uniform, about 5 minutes. Fold the whipped cream into the peanut butter mixture, a third at a time. Refrigerate until ready to use.
  • Blacken the cinnamon a bit on a gas burner.
  • Put the maple syrup in a pan and heat until warm. Remove from the heat, add the blackened cinnamon sticks and let steep in the syrup for 20 minutes.

  • Remove crust from bread. Lay bread out on counter and spread a thin layer of peanut butter on each slice. Peel banana and slice enough to cover every other piece of bread. 8 slices vegan sandwich bread (see Cook's Note)

4 tablespoons coconut oil
Fresh berries, for topping
Confectioner's sugar, for topping

Steps:

  • Prepare a campfire or a charcoal grill for medium-high heat. Put a square pie iron on the fire to preheat.
  • Smash the banana with a fork until as smooth as possible in a rimmed pie pan or wide food-storage container. Stir in the coconut milk and a pinch of salt until completely combined. Put 2 slices of bread on a work surface and spread one with 1 tablespoon peanut butter and the other with 1 tablespoon jam or jelly, leaving a half-inch border on each. 2 medium eggs

  • 3. Dip into egg mixture on both sides, making sure bread absorbs it. Then place onto a preheated buttered frying pan. Toast on both sides, and repeat with the other sandwiches.
  • 4. Reserving about 6 or 7 of the strawberries. Hull, wash, and place the rest of the strawberries in a blender with the maple syrup. Blend on high until all the berries are pureed.
  • 5. With the remainder of the strawberries, hull and slice (I use an egg slicer for uniform slices) then add the pureed strawberries.
  • 6. To serve, place two of the peanut butter sandwiches on a plate. Top with strawberry syrup and dust lightly with powdered sugar (if desired). Bon Appetit!

6 slice white bread
2 bananas
1 1/2-3 Tbsp creamy peanut butter
2 eggs
2 tsp vanilla
1/4 c almond milk or any milk you want
1 tsp ground cinnamon
1 Tbsp canola oil

Steps:

  • 1. Spread 1/2 to 1 tablespoon of peanut butter on 3 of the slices of bread. Then divide the sliced bananas evenly between the 3 pieces of bread, laying them in one thin layer atop the peanut butter. Top with the other slice of bread. Set aside.
  • 2. Mix the eggs, milk, vanilla, and cinnamon. Dip each sandwich into the egg mixture to coat. Set aside.
  • 3. Heat a large pan with the canola oil in it over medium heat. When hot, add the dipped sandwiches to the pan. Brown on one side. Then flip and reduce heat to low. Continue to look until the second side is browned and the inside is slightly melted and gooey. Serve right away with pure maple syrup.

SANDWICHES
8 slices whole grain bread
1/2 c low sugar or no sugar jam or jelly
2 eggs
1 c milk
PEANUT BUTTER SYRUP
1/2 c peanut butter (I used natural)
1/2 c half and half or milk
3 Tbsp maple syrup

Steps:

  • 1. Combine peanut butter, half and half and maple syrup in a small saucepan. Whisk thoroughly. Heat over medium heat, whisking occasionally until hot and just starting to simmer. Remove from heat, cover and set aside.
  • 2. Spread jelly on 4 slices of the bread and top with remaining 4 slices.
  • 3. Whisk together eggs and milk.
  • 4. Heat a skillet sprayed with cooking spray over med-high heat. Dip each sandwich in egg mixture(both sides), and cook until golden brown on one side. Flip over and cook the other side.
  • 5. Cut cooked sandwiches into triangles, arrange on plates and drizzle with the peanut butter syrup.

■12 slices of day old French bread sliced 1/2 inch thick
■2 tablespoons butter or non-stick cooking spray
■5 large eggs
■6 tablespoons creamy peanut butter
■1/2 cup cream
■1/2 teaspoon vanilla extract
■4 tablespoons of you r favorite jam, jelly or preservatives (I chose strawberry preserves)
■powdered sugar

Steps:

  • 1. In a large bowl, mix the eggs, 4 tablespoons of the peanut butter, the cream and the vanilla extract with a whisk. Keep whisking; the peanut butter will eventually break down. 2. Heat the butter in a skillet over medium low heat. Dip the slices in the egg mixture and cook until egg sets on both sides. Heat the remaining 2 tablespoons of peanut butter in the microwave oven for 1 minute. Then heat the jam or preserves in the microwave for 30 seconds. Drizzle the liquefied peanut butter and the liquefied jam over the cooked French toast. Sprinkle with powdered sugar. Add crushed peanuts if you dare go crunchy.
