This is my niece Heathers favorite fudge. It can be made with or without the unsweetened chocolate.

Number Of Ingredients 6

4 oz unsweetened chocolate (if making chocolate peanut butter version)
8 oz cream cheese, room temperature
1/2 c peanut butter
5 c powdered sugar
1 tsp vanilla
1/2 c walnuts or pecans

Steps:

  • 1. Melt chocolate and cool to room temperature, if you are making the chocolate peanut butter version, if not skip this step.
  • 2. Add cream cheese and peanut butter to chocolate (if making the chocolate peanut butter version), if not just mix the cream cheese and peanut butter and proceed with the recipe..
  • 3. Add sugar and vanilla, mixing well. Chop and add the nuts.
  • 4. Spread in an 8" or 9" square pan. You can place a piece of nut on each square for decoration. Refrigerate 2 hours before cutting.

3/4 cup fudge ice cream topping

  • In ungreased 8-inch round cake pan, spread cereal evenly. Drop ice cream by small spoonfuls on top of cereal. Rinse metal spoon with hot water; wipe dry. With back of hot spoon, spread ice cream evenly in pan, pressing down firmly and reheating spoon as needed.
  • In small microwavable bowl, mix fudge topping and peanut butter until well blended. Microwave on High 20 seconds. Stir to blend; continue to microwave on High in 5-second increments until mixture can be stirred smooth and is pourable.

I plan to use Splenda for baking in place of the sugar.
