VIRGINIA PEANUT SOUP

Rich, creamy and smooth, this Virginia Peanut Soup is the old-fashioned recipe made famous at the taverns in Colonial Williamsburg.

Provided by Blair Lonergan

Categories     Lunch or Dinner

Time 55m

Number Of Ingredients 8

¼ cup butter
1 medium onion, chopped
2 ribs celery, chopped
¼ cup all-purpose flour
8 cups chicken broth
2 cups smooth peanut butter ((use a jar of store-bought peanut butter, or see note below to make your own natural peanut butter))
1 ¾ cups light cream
Garnish: chopped roasted salted peanuts, chopped fresh parsley; sliced green onion

Steps:

  • Melt butter in a large Dutch oven or soup pot over medium-high heat. Add onion and celery and sauté until soft, but not brown (about 5-7 minutes). Stir in flour until well blended, about 1 minute.
  • Add chicken broth, stirring constantly, and bring to a boil. Reduce heat to low and simmer broth uncovered for about 10 minutes (to allow the broth to thicken slightly). Remove from heat and puree with a hand-held stick blender, in a food processor, or in batches in a regular blender.
  • Add peanut butter and cream, stirring to combine. Heat over low heat, just until warmed through and peanut butter is melted (do not boil). Ladle into individual bowls and garnish with chopped peanuts, parsley and/or sliced green onion.

SPICY PEANUT AND PUMPKIN SOUP

Spicy Peanut and Pumpkin Soup image

This recipe is a promise of warmth on those cool autumn nights. Habanero chiles and peanuts both feature heavily in Nigerian cuisine, and this soup is an adaptation of a long-simmered stew common to much of West Africa. Don't be afraid of a chile with seeds: The fragrant oils from these peppers are worth every bite. The peanut butter and coconut milk mellow the warmth of the chile to a gentle, lingering heat, but you can also take the chile out before the soup is puréed. An optional spoon of honey to the soup will round out the flavors, and a dollop of crème fraîche or yogurt will further temper the heat. Serve with a baguette or sourdough bread for dipping.

Time 35m

Yield 4 servings

Number Of Ingredients 13

2 tablespoons olive oil
1 medium onion, peeled and diced (about 1 1/2 cups)
4 garlic cloves, smashed
1 (1-inch) piece ginger, peeled and chopped
1/2 habanero or bird's eye chile
1 (14-ounce) can pumpkin purée
3 cups water or chicken or vegetable stock
1 (13-ounce) can coconut milk
1 tablespoon agave or honey (optional)
1/4 cup unsweetened natural peanut butter
Salt
2 tablespoons sliced fresh chives
1/4 cup crème fraîche or yogurt (optional)

Steps:

  • In a large stock pot, heat oil over medium heat. Add onion, garlic and ginger, and cook, stirring frequently until softened and just beginning to brown around the edges, about 4 minutes. Stir in the chile and pumpkin purée, and whisk in the water or stock. Bring to a boil, reduce the heat and allow to simmer on low, giving an occasional stir, for 20 minutes or until slightly reduced and thickened. Remove the chile after the soup simmers if you don't care for much spice.
  • Add coconut milk, agave or honey (if using), and peanut butter to the pot. Using an immersion blender or working in batches in a standing blender, purée the soup until smooth. Season with salt and keep warm over low heat. Do not bring soup up to a simmer or boil at this point. (This reduces the risk of the oils in the peanut butter separating and breaking the soup's smooth texture.)
  • Divide soup between bowls, sprinkle with the chives and a dollop of crème fraîche or yogurt, or a drizzle of olive oil to make it vegan. Serve with a warm crusty baguette or chunks of warm sourdough for dipping.

PEANUT BUTTER SOUP

Peanut Butter Soup image

My mom use to make this for us kids and it was good with a sandwich on the side. It is so simple, I was hesitant to post it

Provided by RogerOH

Categories     < 15 Mins

Time 7m

Yield 2 serving(s)

Number Of Ingredients 4

1 (10 3/4 ounce) can condensed cream of celery soup
1/3 cup peanut butter (Creamy or Crunchy)
celery salt
oyster crackers

Steps:

  • Mix soup in small sauce pan per label directions
  • Add 2 Tbs of Peanut Butter
  • Heat soup on medium heat, stirring occasionally, until Peanut Butter is melted and soup is heated through
  • Ladle into bowl and sprinkle to taste with celery salt
  • Serve with oyster crackers.

Tips:

  • Choose the right celery: Use fresh, crisp celery for the best flavor. Avoid celery that is wilted or has brown spots.
  • Don't overcook the celery: Celery should be cooked until it is tender but still has a slight crunch. Overcooked celery will be mushy and lose its flavor.
  • Use a good quality peanut butter: The peanut butter is the star of this soup, so use a brand that you love. Avoid peanut butter that is too sweet or has added oils.
  • Add some spice: If you like a little heat, add a pinch of cayenne pepper or chili powder to the soup. You could also add some chopped fresh jalapeño pepper.
  • Garnish the soup: Before serving, garnish the soup with a sprinkling of chopped peanuts, celery leaves, or croutons.

Conclusion:

Peanut butter and celery soup is a unique and delicious dish that is perfect for a cold winter day. It is creamy, flavorful, and packed with nutrients. Plus, it's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new soup recipe to try, give peanut butter and celery soup a try.
