3 medium green onions, thinly sliced (3 tablespoons)
1/3 cup Original Bisquick™ mix
1 cup milk
4 eggs
1/4 cup chunky-style salsa
1/4 cup peach preserves

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. Sprinkle 1 cup of the cheese and the onions in pie plate.
  • In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until well blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/4 cup cheese; bake 3 to 5 minutes longer or until melted. Let stand 5 minutes before serving.

1 cup peeled, sliced peaches
2 tablespoons lemon juice
4 slices bacon
2 tablespoons water
6 eggs
1 teaspoon chopped fresh chives
¼ teaspoon salt
1 tablespoon white sugar
⅛ teaspoon ground black pepper
1 pinch paprika

Steps:

  • Mix peaches with lemon juice; set aside. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve 1 tablespoons bacon grease in skillet.
