2 cans (15-1/4 ounces each) sliced peaches
1 cup sugar
1/4 cup cornstarch
TOPPING:
1-1/2 cups old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons cold butter, cubed

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, brown sugar and salt. Cut in butter until crumbly. Pat into a greased 9-in. square baking pan. 1 teaspoon vanilla extract
2/3 cup granulated sugar
1 tablespoon cornstarch
1 cup and 2 tablespoons all-purpose flour, divided
2 cups old-fashioned oats
3/4 cup dark brown sugar
1 1/2 tablespoons cinnamon
1 teaspoon kosher salt
1 cup unsalted butter, cut into 1/2-inch cubes
1/2 cup chopped pecans, optional

Steps:

  • Place peach slices in a large mixing bowl and toss to coat in the vanilla extract. In a separate bowl, whisk together sugar, cornstarch, and 2 tablespoons all-purpose flour. Dump sugar mixture onto peaches, and toss the peaches until they are evenly coated. Set aside for 30 minutes.
  • In the bowl of a stand mixer, combine remaining 1 cup flour, oats, brown sugar, cinnamon, and salt. Mix to combine.
