PEACH COBBLER WITH SUGAR COOKIE CRUST
While we were vacationing with friends in Duck, N.C. we bought a bushel of peaches. I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

- Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them.
- Sprinkle entire cobbler with the sugar and cinnamon mixture.

Tips:
- For the best flavor, use ripe, juicy peaches. If your peaches are not ripe, you can ripen them by placing them in a paper bag with an apple or banana for a few days.
- To make the sugar cookie crust extra crispy, bake it for a few minutes before adding the peach filling.
- If you don't have a 9x13 inch baking dish, you can use a 10-inch cast iron skillet instead.
- Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream.
Conclusion:
Peach cobbler with sugar cookie crust is a delicious and easy-to-make dessert that is perfect for summer gatherings. The combination of sweet peaches, crispy sugar cookie crust, and creamy ice cream is sure to please everyone. So next time you have a craving for something sweet, give this recipe a try!
