Steps:

  • You need 2 large handfuls of baby spinach -- check for nasty stalky or wilted bits and then give it a really good wash (nobody likes gritty spinach). Spin dry, and add to a salad bowl with 2 smaller handfuls of fresh peas (unless you are lucky enough to get young peas which are sweet and tender, you should blanch the peas in boiling, unsalted water and leave to cool). Dress the salad at the last minute with olive oil and lemon juice dressing and sprinkle crumbled feta cheese over the top.

SUGAR SNAP PEA SALAD WITH RADISHES, MINT AND RICOTTA SALATA

Sugar Snap Pea Salad With Radishes, Mint and Ricotta Salata image

There's a reason pea salad is usually slathered in mayonnaise. Just try to get those tiny rolling orbs to stay on your fork without it. That's why when it comes to pea salads, choose sugar snaps. They have the same bright sweetness as shelled peas but, eaten pod and all (no shucking required), they're easier to grab. Here, raw sugar snap peas are tossed with radishes, fresh mint, ricotta salata and a simple lemon-balsamic vinaigrette for a easy salad that's sweet, salty, creamy and fresh tasting.

2 teaspoons cumin seeds
2 tablespoons fresh lime juice
2 teaspoons honey
1/4 cup olive oil
3 tablespoons fresh dill, chopped
4 cups peas, preferrably fresh and shelled
1 bunch radish, trimmed halved and thinly sliced
1/2 cup feta cheese, crumbled

Steps:

  • Whisk lime juice, honey and cumin in small bowl. Gradually whisk in oil; stir in dill.
  • Season dressing with salt and pepper.
  • Cook peas in pot of boiling salted water until almost tender, about 5 minutes (if using fresh), about 2 mintues for frozen. Drain; rinse under cold water, then drain well.
  • Transfer peas to bowl. Add radishes, feta and dressing; toss to coat well. Season with salt and pepper. If using pea tendrils, divide among bowls.

Tips:

  • Use fresh, tender peas for the best flavor. Avoid using frozen or canned peas, as they can be mushy.
  • Choose radishes that are firm and crisp. Avoid radishes that are wilted or have brown spots.
  • Use a good quality feta cheese. Feta cheese that is made from sheep's milk or a blend of sheep's and goat's milk will have the best flavor.
  • Chop the vegetables into uniform pieces so that they cook evenly.
  • Don't overcook the vegetables. They should be cooked until they are tender-crisp, but still retain their bright color.
  • Serve the salad immediately after it is made. This will prevent the vegetables from becoming wilted.

Conclusion:

Pea salad with radishes and feta cheese is a refreshing and flavorful side dish that is perfect for summer picnics and potlucks. It is also a healthy and nutritious salad that is packed with vitamins, minerals, and antioxidants. With its simple ingredients and easy preparation, this salad is sure to become a favorite.
