Time 1h40m

Yield 4

Number Of Ingredients 10

4 tablespoons butter
4 green onions, chopped
1 pound frozen or fresh green peas
2 ½ cups vegetable broth or stock
3 tablespoons chopped fresh mint leaves
2 ½ cups milk
salt and freshly ground black pepper to taste
1 pinch white sugar
½ cup light whipping cream
2 sprigs fresh mint leaves for garnish

Steps:

  • Melt butter in a large saucepan or Dutch oven over low heat. Add the 4 chopped green onions, and cook until softened, but not brown. Stir in the peas, vegetable stock, and 3 tablespoons of chopped fresh mint. Increase heat to medium, and bring to a boil. Reduce heat back to low, cover, and let simmer for about 30 minutes. If you are using frozen peas, 15 minutes is enough.
  • Using a large slotted spoon, remove about 3 tablespoons of the peas, and set aside for garnish. Pour the soup into a blender or food processor along with the milk, and puree until smooth. Season with salt and pepper to taste. Throw in a pinch of sugar if desired. Allow the soup to cool to room temperature, then refrigerate until chilled.
  • Pour the soup into 4 serving bowls. Swirl 1 tablespoon of light cream into each one, then garnish with reserved peas and sprigs of mint.

PUREED SPINACH AND SWEET PEA SOUP WITH FRESH MINT CREAM

Pureed Spinach and Sweet Pea Soup with Fresh Mint Cream image

Categories     appetizer

Time 52m

Yield 4 to 6 servings

Number Of Ingredients 14

2 big yellow onions, coarsely chopped
3 tablespoons unsalted butter
2 cloves fresh garlic coarsely chopped
2 (10-ounce) bag (or the equivalent) fresh spinach, rinsed
2 1/2 cups frozen petite peas
3 cups vegetable or chicken stock
1/2 cup light cream
1 tablespoon salt
Freshly ground black pepper
Fresh Mint Cream, recipe follows
1/2 cup finely chopped fresh mint leaves
1 cup sour cream
1/2 cup half-and-half
Salt and pepper

Steps:

  • Saute onions in the butter in a large soup pot over high heat, stirring occasionally to prevent onions from sticking until they begin to soften about 10 minutes. Add garlic, lower the heat to medium and continue cooking for another 10 minutes until onions are translucent. Stir in spinach and saute until wilted about 5 minutes more. Add peas and the stock to the pot and bring to a boil over high heat. Lower the heat and simmer, uncovered, for 10 minutes. Remove soup from heat and allow to cool for a few minutes.
  • Using a food processor puree soup in small batches (use a second bowl to pour puree in until all soup is pureed). Place puree back into pot, add cream and bring to simmer over low heat.
  • To serve, ladle soup into 4 large bowls and top with about 3 tablespoons of the fresh mint cream.
  • In a bowl, using a whisk, combine all ingredients until smooth.

Yield Makes 10 servings

Number Of Ingredients 6

2 tablespoons olive oil
1 2/3 cups chopped shallots (about 6 very large)
2 garlic cloves, minced
8 cups shelled fresh peas (from about 5 pounds peas in pods) or two 16-ounce bags frozen petite peas, unthawed
5 1/2 cups (or more) low-salt chicken broth (preferably organic)
1/4 cup chopped fresh mint plus additional for garnish

Steps:

  • Heat oil in heavy large pot over medium heat. Add shallots and garlic. Sauté until tender, about 7 minutes. Add peas and stir 1 minute. Add 5 1/2 cups broth and bring to simmer. Cook until peas are very tender, about 8 minutes. Cool 15 minutes. Puree soup and 1/4 cup chopped mint in batches in blender until smooth. Return to same pot; thin with more broth by 1/4 cupfuls, if desired. DO AHEAD: Can be made 1 day ahead. Cool, cover, and chill.
  • Rewarm soup over medium-low heat. Season to taste with salt and pepper. Ladle into bowls; garnish with additional mint.
  • What to drink:
  • A bottle of bubbly is the perfect way to begin this special meal. It's also a great pairing for the soup. We like the crisp acidity and long finish of the Champagne Henriot NV Brut Souverain ($35, France).

PEA AND MINT SOUP

Pea and Mint Soup image

This is a simple, delicious soup that can be served either hot or cold. Adding ham is optional. Note the chopping of veggies in the ingredient section. Once everything is prepped, the soup comes together in a snap! This soup goes well with a nice piece of crusty bread...or toasted bread drizzled with a little bit of olive oil. Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 3/4 quarts chicken (try organic!) or 1 3/4 quarts vegetable broth (try organic!)
2 tablespoons olive oil
2 carrots, peeled and sliced
2 celery ribs, sliced
2 medium onions, peeled and roughly chopped
2 garlic cloves, peeled and sliced
5 1/2 cups frozen peas
of fresh mint, small bunch, chopped, to taste (could use only 1/2 a bunch)
sea salt & freshly ground black pepper, to taste
3/4 lb cooked ham

Steps:

  • Pour the broth into a medium saucepan and heat until boiling.
  • In a separate, large saucepan on medium heat, add 2 T. of olive oil.
  • Add the prepped carrots, celery, onions and garlic and mix together. Put a lid on, slightly off center so some steam can escape. Cook this for about 10 minutes, until the carrots are tender but still holding their shape and the onions are golden.
  • Add the boiling broth to the veggies.
  • Add the peas.
  • Stir and bring to a boil.
  • Once boiling, bring the soup to a simmer. Simmer for about 10 minutes, until peas are softened.
  • Take the pan off the heat and season with salt and pepper and add some mint leaves. *Jamie says to use a small bunch. I think this is a matter of personal taste, in terms of how much mint flavor you like to shine through. Start out small and increase until your taste buds are pleased! I added about half a bunch of chopped mint and thought it was enough for my tastes.
  • Using an immersion blender (or blender), blend the soup until smooth. (If you are using a regular blender, do it in batches so the hot soup won't come out the top of your blender).
  • Optional:.
  • If you are using ham, chop it up into bite-size pieces and stir it into the blended soup.
  • Heat the soup through before serving OR let it cool, store it in your fridge and eat it cold anytime you'd like!

Yield 6 to 8 servings

Number Of Ingredients 12

2 tablespoons sweet butter
1 small onion, diced
1 stalk celery, washed, diced
1 leek, white only, washed, diced
Salt and pepper
1 teaspoon curry powder
1 bay leaf
1/2 teaspoon dried thyme
2 quarts chicken stock
3 pounds fresh peas, shelled
1 cup creme fraiche
2 tablespoons chopped fresh mint

Steps:

  • In a soup pot melt butter and add onion, celery, leek, salt, and pepper. Cook vegetables for 5 minutes until translucent. Add curry powder and cook 2 minutes. CHILLED GREEN PEA SOUP WITH MINT AND AVOCADO

Chilled Green Pea Soup with Mint and Avocado image

This is a soup that I serve for special occasions (like Easter), and catering events (like weddings). It's relatively simple to make, and creates a wonderful presentation, when served in a martini glass. Although this soup is cooked and then cooled, you can skip the cooking and make the soup entirely in the blender. In...

Time 30m

Number Of Ingredients 13

3 Tbsp sweet butter, unsalted, or olive oil (extra virgin)
1 medium yellow onion, finely chopped
1 stalk(s) celery, finely chopped
4 c chicken stock, divided
6 c fresh peas or frozen peas, thawed (recommend fresh)
1/4 c fresh flat-leaf parsley leaves
1/4 c fresh mint leaves
1 tsp fresh dill, finely chopped
1 Tbsp freshly squeezed lemon juice
1 medium ripe avocado, halved, stone removed, and flesh scraped out
salt, kosher variety, to taste
freshly ground black pepper, to taste
1/4 c crème fraîche, for garnish

Steps:

  • 1. Gather your ingredients.
  • 2. Place the stock in a saucepan and bring up to a lite simmer.
  • 3. Chef's Note: In most cases, you want to avoid adding cold ingredients to cooked ingredients; such as a cold stock to the hot veggies. It can do strange things to the taste of your final product.
  • 4. Place the butter (or olive oil) in a large pot over medium heat.
  • 5. Add the onion and the celery, and stir with a wooden spoon until the veggies are softened, about 8 to 10 minutes.
  • 6. Chef's Note: Do not let them brown or burn.
  • 7. Add two cups of the chicken stock, and bring the mixture to a boil.
  • 8. Add the peas, and then immediately reduce the pot to a lite simmer.
  • 9. Allow the pot to lightly simmer for about 5 minutes.
  • 10. Remove from the heat, and add the remainder of the ingredients with the exception of the crème fraîche, salt, and pepper.
  • 11. Purée the soup in a blender, and then season with the salt and pepper, to taste.
  • 12. Chef's Tip: Have some additional stock on hand, just in case the soup is too thick.
  • 13. Use a fine mesh strainer to strain the soup.
  • 14. Cover and place in the refrigerator overnight.
  • 15. Serve cool, with a dollop of crème fraîche. Enjoy.
  • 16. Keep the faith, and keep cooking

Tips:

  • For a smoother soup, blend it until it reaches your desired consistency. You can use an immersion blender or a regular blender.
  • If you don't have fresh peas, you can use frozen peas instead. Just be sure to thaw them before using.
  • If you want to make a vegan version of this soup, you can use vegetable broth instead of chicken broth and omit the butter.
  • Serve the soup with crusty bread or crackers for a complete meal.

Conclusion:

Pea and mint soup is a delicious and easy-to-make soup that is perfect for a light lunch or dinner. It is also a great way to use up leftover peas. With its vibrant green color and refreshing flavor, this soup is sure to please everyone at your table. So next time you're looking for a quick and healthy meal, give this pea and mint soup a try.
