Yield 4

Number Of Ingredients 6

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

Tips:

  • Choose the right liver: Beef liver is the most commonly used, but you can also use pork or lamb liver. Make sure the liver is fresh and has a deep red color. Avoid any liver that is brown or has a slimy texture.
  • Soak the liver in milk: This will help to remove any impurities and make the liver more tender. Soak the liver in milk for at least 30 minutes, or overnight if you have time.
  • Slice the liver thinly: This will help it to cook evenly. Slice the liver against the grain, into 1/2-inch thick slices.
  • Season the liver: Season the liver with salt, pepper, and any other desired seasonings. You can also dredge the liver in flour before frying.
  • Cook the liver over medium heat: This will help to prevent the liver from becoming tough. Cook the liver for 5-7 minutes per side, or until it is cooked through.
  • Serve the liver with your favorite sides: Liver and onions is a classic dish, but you can also serve liver with mashed potatoes, rice, or roasted vegetables.

Liver and onions is a delicious and nutritious dish that is easy to make. By following these tips, you can make sure that your liver and onions turns out perfect every time. So next time you're looking for a quick and easy meal, give liver and onions a try!
