Time 1h

Yield 8

Number Of Ingredients 8

2 cups all-purpose flour
½ cup shortening, chilled
1 teaspoon salt
½ cup cold water
2 apples
¼ cup white sugar, or to taste
⅛ teaspoon ground cinnamon, or to taste
oil for frying

Steps:

  • Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
  • Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
  • In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned

FRIED PIE PASTRY DOUGH

Fried Pie Pastry Dough image

I make these for my dad.

Provided by Kathy Williams

Categories     Pies

Time 40m

Number Of Ingredients 7

3 c all purpose flour
1 tsp salt
3/4 c crisco (cold)
1 egg, beaten
1/4 c ice water
1 tsp white vinegar
cinnamon and sugar mixture

Steps:

  • 1. In a large bowl, combine flour and salt. Cut in crisco with a pastry knife until it resembles coarse crumbs.
  • 2. Combine beaten egg and ice water. Sprinkle over flour. Add in white vinegar. Mix until it all comes together to form a ball. Add more water if its looks too dry. Wrap in plastic wrap and refrigerate for 30 minutes.
  • 3. Roll out dough into 6 inch rounds. Fill with favorite fruit filling, wet edges with a little water, fold over and crimp together with a fork.
  • 4. Deep fry for 2-4 minutes until golden brown. Sprinkle with cinnamon and sugar.

Tips:

  • Chilling the Dough: Before rolling and cutting the dough, chill it for at least 30 minutes. This helps prevent the dough from becoming too sticky and makes it easier to work with.
  • Rolling the Dough: When rolling the dough, use a light touch and avoid overworking it. Overworking the dough can make it tough and less flaky.
  • Cutting the Dough: Use a sharp knife or pastry cutter to cut the dough into even circles. Make sure the circles are large enough to accommodate your desired filling.
  • Filling the Dough: Be careful not to overfill the dough circles. Too much filling can make the pies difficult to seal and may cause them to burst during frying.
  • Sealing the Dough: Use a fork or your fingers to seal the edges of the dough circles. Make sure the edges are securely sealed to prevent the filling from leaking out during frying.
  • Frying the Pies: Heat the oil to the desired temperature before frying the pies. Do not overcrowd the pan, as this can cause the oil temperature to drop and result in greasy pies.
  • Draining the Pies: After frying, drain the pies on paper towels to remove excess oil.

Conclusion:

With the right ingredients and techniques, you can easily make delicious fried pies at home. By following these tips, you can create flaky pastry that is perfectly complemented by your favorite fillings. Whether you prefer sweet or savory pies, fried pies are a versatile and satisfying treat that can be enjoyed for breakfast, lunch, or dinner.
