4 slices of rye bread
7 oz sliced deli pastrami
8 slices provolone cheese
1/2 yellow onion (sliced thin)
1 tbsp butter + 2 tbsp softened butter (divided)
3 tsp Dijon mustard
coleslaw (dill pickle slices, sliced tomato, cooked waffle fries, optional)

Steps:

  • Start by adding your onions to a small pan with 1 tbsp of butter. Saute over medium/high heat until onions are golden and translucent.
  • Place sliced pastrami on a microwave-safe plate and heat in 30-second increments until heated through.
  • Lightly butter the outsides of all four pieces of bread.
  • On the inside of the bread, build your sandwiches by spreading dijon mustard over each slice of bread, then layering 1 piece of cheese, hot pastrami, grilled onions, and one more slice of cheese.
  • OPTIONAL - if you want your toppings heated up, add those now too. (I prefer to add them a the end)
  • Place remaining 2 pieces of bread on top of the cheese, buttered side facing up.

1 cup sugar
Coarse salt and pepper
2 Kirby cucumbers, thinly sliced lengthwise

3 tablespoons grainy mustard

8 slices Swiss (6 ounces)
4 teaspoons mayonnaise

Steps:

  • In a small saucepan, bring vinegar, sugar, 1 teaspoon salt, 1/2 teaspoon pepper, and 1 cup water to a boil over medium-high. Reduce to a simmer and cook until sugar is dissolved, about 2 minutes. Remove from heat and add cucumbers. Cover and let cool until cucumbers are softened, 10 minutes.

1/2 cup cider vinegar, divided
4 cups shredded cabbage
3-1/2 cups frozen waffle-cut fries
1/4 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon pepper
1 pound sliced deli pastrami
4 slices provolone cheese
8 slices Italian bread (3/4 inch thick), toasted
2 medium tomatoes, thinly sliced

Steps:

  • In a large bowl, combine 1/4 cup of the sugar and vinegar; add cabbage and toss to coat. Cover and let stand for 30 minutes. Meanwhile, bake fries according to package directions., Drain cabbage. 2 slices caraway rye bread
1 slice provolone

4 ounces hot pastrami
2 to 3 ounces sauerkraut
2 to 4 tablespoons mayonnaise

  • Heat a flattop grill or pan on medium heat. Butter one side of each slice of bread. Set the buttered side of bread on the flattop. Add provolone to one slice and Swiss to the other slice.
