Place coarse sugar into a shallow bowl. Press one side of each cut out into sugar lightly to coat. Place cutouts sugar side up 1 inch apart on ungreased cookie sheet. With a fork prick 4 parallel rows in each cutout Bake for 8 to 10 minutes or until edges begin to brown. Transfer to a rack until cooled Spread about 1 teaspoon Powdered Sugar Frosting on the flat side of half of them cookies. Top with the remaining tops flat side down POWDERED SUGAR FROSTING In a small bowl combine 1 cup powdered sugar, 1 tablespoon softened butter, 1/2 teaspoon vanilla, 1 drop desired colour food colouring, and enough 1/2-and-half or light cream (3 to 4 teaspoons) to make a frosting of spreading consistency Makes about 1/2 cup
