1/2 lb pasta, cooked al dente and drained
1 (6 ounce) jar artichoke hearts, marinated
1 tablespoon olive oil
1 tablespoon butter
1 cup onion, sliced
1 teaspoon dried basil
1/2 cup sour cream
1/2 cup cottage cheese
salt
pepper
cayenne pepper
parmesan cheese

Steps:

  • Drain liquid from the marinated artichokes into a skillet.
  • Slice the drained hearts into bite sized pieces.
  • Add olive oil and butter to artichoke marinade and heat. Add onions and saute until soft (about 5-8 minutes).

1 medium onion, chopped

12 ounces linguine, freshly cooked
1 1/2 cups grated Parmesan cheese (about 5 ounces)

1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
4 cups uncooked bow tie pasta (about 12 ounces)
3 tablespoons olive oil, divided
1 can (14 ounces) water-packed quartered artichoke hearts, well drained
2 garlic cloves, minced
1 cup crumbled goat cheese
2 tablespoons minced fresh parsley
1 tablespoon grated lemon zest
2 to 3 tablespoons lemon juice
1/3 cup grated Parmesan cheese

  • Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender.
