Yield Makes 6 servings

Number Of Ingredients 9

2 tablespoons olive oil
1 tablespoon unsalted butter
4 slices thick-cut bacon, cut into 1/2" pieces
2 medium leeks, white and pale-green parts only, halved lengthwise, sliced crosswise
Kosher salt
3/4 cup heavy cream
2 teaspoons chopped fresh thyme
1 pound pappardelle or fettuccine
1 cup finely grated Parmesan or Grana Padano

Steps:

  • Heat oil and butter in a large heavy pot over medium heat. Add bacon and cook, stirring often, until fat is rendered and bacon is crisp, 5-8 minutes. Add leeks and season with salt. Increase heat to medium-high and cook, stirring often, until leeks begin to brown, 5-8 minutes. Add cream, thyme, and 1/2 cup water. Bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened and coats the back of a spoon, 5-8 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 2 cups pasta cooking liquid.
  • Add pasta, Parmesan, and 1 cup pasta cooking liquid to sauce and stir to coat. Increase heat to medium and continue stirring, adding more cooking liquid as needed, until sauce coats pasta.

PASTA WITH PARSNIPS AND BACON

Pasta With Parsnips and Bacon image

They may seem like an unlikely duo, but pasta and parsnips work really well together, with the parsnips becoming almost like a sweet and soft extension of the pasta. And they're another vehicle for the creamy, bacon-rich sauce. You can roast the parsnips several hours ahead (they'll be fine at room temperature). But the rest of the dish is best made just before serving. Then serve it hot. There are few dishes that are cozier on a cold winter night.

Yield 2 servings

Number Of Ingredients 9

3 medium parsnips (3/4 pound), peeled and cut into 1/2-inch pieces
1 1/2 tablespoons extra-virgin olive oil, more for drizzling
Kosher salt and black pepper, as needed
1/2 pound dried campanelle or farfalle pasta
1/4 pound bacon, diced
1 medium leek, thinly sliced
3/4 cup heavy cream
2/3 cup grated Parmesan cheese
2 tablespoons chopped parsley

Steps:

  • Heat oven to 400 degrees. Toss parsnips with oil and season with salt and pepper. Roast, tossing occasionally, until parsnips are golden and tender, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until 1 minute before it's al dente. Drain.
  • In a large skillet over medium-high heat, brown the bacon until crisp, about 5 minutes; use a slotted spoon to transfer bacon to a paper-towel-lined plate to drain. Discard all but 1 tablespoon of fat from the pan.
  • Return skillet to heat and add leeks. Cook in remaining bacon fat until softened, about 5 minutes. Stir in heavy cream and cooked bacon. Simmer mixture until slightly thickened, 2 to 3 minutes.
  • Stir in pasta, parsnips and cheese. Simmer until heated through and cheese is melted, then remove from heat. Season with salt and pepper; toss with parsley. Serve drizzled with olive oil, with plenty of black pepper on top.

Linguine With Smoked Bacon, Leeks and Clams image

Briny clams come together with smoky bacon and sautéed leeks in this showstopper. Quick to prepare, this weeknight recipe is decidedly sophisticated. First, sauté the bacon, add the garlic and leeks and add some good white wine and tomatoes. Toss with al dente linguine and top with clams and lemon juice. Finish with it with parsley and pine nuts, and pour yourself a glass of that wine. With this simple, elegant meal, you've earned it.

Time 30m

Yield Serves 4

Number Of Ingredients 14

Salt
3 dozen littleneck clams
3 tablespoons olive oil
1/4 pound smoked bacon, cut into small cubes
8 cloves garlic, thinly sliced
2 cups thinly sliced leeks (white and light-green parts only)
1/2 cup dry white wine
1 teaspoon freshly ground black pepper, plus more to taste
Pinch cayenne or crushed red pepper flakes
1 to 1 1/2 cups cherry tomatoes, halved
1 pound linguine
3 tablespoons lemon juice (optional)
1/4 cup coarsely chopped flat-leaf parsley
1/4 cup lightly toasted pine nuts

Steps:

  • Bring a large pot of lightly salted water to a boil. Meanwhile, scrub the clams under cold running water with a stiff-bristled brush, then refrigerate.
  • Place a large saute pan over medium heat and add the olive oil. When the oil is hot, add the bacon and saute until the fat has rendered and the bacon starts to brown. Add the garlic and leeks and saute until the leeks have softened and released most of their liquid. Increase heat to high and add the wine, black pepper, cayenne and tomatoes; boil until the wine is reduced by half, about 5 minutes.
  • Add the linguine to the boiling water and cook until just before it is al dente. Meanwhile, add the clams and, if desired, the lemon juice to the saute pan. Cover and cook until the clams open completely, about 5 minutes. Season to taste with salt.
  • Drain the linguine and add to the pan with the clams; it will continue to cook when added to the mixture. Season to taste with salt and pepper. Garnish with parsley and pine nuts.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in this dish. Look for thick, meaty bacon, leeks that are firm and green, and a dry white wine that you enjoy drinking.
  • Cook the bacon until it's crispy: This will add a delicious smoky flavor to the dish. Be patient and cook the bacon over medium heat until it's nice and crispy.
  • Don't overcook the leeks: Leeks should be cooked until they are soft and tender, but still have a bit of a bite to them. Overcooking them will make them mushy.
  • Use a good quality white wine: The wine you use in this dish will add a lot of flavor, so it's important to choose a wine that you enjoy drinking. A dry white wine, such as Sauvignon Blanc or Pinot Grigio, is a good option.
  • Serve immediately: Pasta with bacon and leeks is best served immediately, while the pasta is still hot and the sauce is creamy. Garnish with fresh parsley or chives for a pop of color.

Conclusion:

Pasta with bacon and leeks is a simple but delicious dish that is perfect for a weeknight meal. It's also a great way to use up leftover bacon. The combination of crispy bacon, tender leeks, and creamy sauce is sure to please everyone at the table. So next time you're looking for a quick and easy pasta dish, give this recipe a try.
