Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons red wine vinegar
1 small shallot, minced
1 teaspoon dried oregano
8 ounces dried ziti
1 cup chopped cucumber
1/2 cup crumbled feta
1/4 cup chopped flat-leaf parsley
1/4 cup pitted Kalamata olives, chopped
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.

2 tablespoons salt
1 pound pasta, small tubes or shells
3/4 cup extra virgin olive oil
1 cup cubed Mozzarella cheese
3/4 cup black olives
2 medium tomatoes, peeled, seeded, and diced
1 large red onion, diced
3 pickling cucumbers or kirbies, peeled and diced
2 bunches fresh oregano, leaves only, chopped
1/3 cup red wine vinegar
3 dashes hot sauce
Salt and freshly ground black pepper to taste

Steps:

  • Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil, and pasta, and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cool, transfer to a bowl, and toss with 1/4 cup extra virgin olive oil.
  • Mix all remaining ingredients in a bowl. Toss with pasta, adjust seasonings, and serve.

8 ounces medium-size pasta shells (about 2 3/4 cups)
1 cup chopped pitted brine-cured black olives (such as Kalamata)
1 cup chopped red bell pepper
1 cup crumbled feta cheese (about 4 ounces)
1/2 cup diced sharp white cheddar cheese ( about 2 1/2 ounces)
1/2 cup grated Gouda cheese (about 2 1/2 ounces)
6 tablespoons chopped fresh basil
1/4 cup basil vinegar or red wine vinegar
3/4 cup olive oil
Pinch of sugar

Steps:

  • Cook pasta in pot of boiling water until tender but still firm to bite. Drain. Rinse with cold water and drain well.
  • Mix pasta, olives, bell pepper, all cheeses and basil in large bowl to combine. Pour vinegar into small bowl. Gradually whisk in oil. Add sugar; season dressing to taste with salt and pepper. 1/2 lb fresh mozzarella cheese, cut into 1/4 inch cubes
4 large ripe tomatoes, cut into 1/2 inch dice (about 3 lbs.)
1/2 cup kalamata olive, pitted and coarsely chopped
3 garlic cloves, minced
6 tablespoons coarsely chopped fresh basil (do not use dried)
1/4 cup finely chopped fresh flat-leaf parsley (do not use dried)
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
salt & freshly ground black pepper, to taste
1 1/2 lbs fusilli or 1 1/2 lbs corkscrew macaroni

Steps:

  • Combine the mozzarella, tomatoes, olives.
  • In a tight fitting jar compine garlic, basil, parsley, olive oil, vinegar, and salt and pepper and shake.
  • Set aside.
  • Meanwhile bring a large pot of salted water to a boil.
  • Cook the pasta until al dente, about 10 minutes.
  • Drain well.
  • Add the pasta to the mozzarella and tomato.
  • Pour dressing (use all or less according to taste) mixture over Pasta mixture and toss well.

1/2 cup sliced pimento stuffed green olives(sliced black olives will do, but my family prefers the green in this dish)
1/4 tsp. liquid from olive jar
1 cup mayonaise
1 tbls. each of cider, white wine, red wine and tarragon vinegars
1/2 tsp. worcestershire sauce
1/4 tsp. yellow mustard
1 tsp. sugar
salt and pepper
