MY BEST HOT CLAM DIP
This is like stuffed clams topped with melted cheese, without the mess of the shells. I almost always double the recipe because it goes so fast. I have shared this recipe many times and I hope you enjoy it as well.

Steps:
- 1. Mix clams and their own juice with lemon juice in saucepan and bring to boil then let gently simmer for 10 minutes. In another pan, saute onions, garlic and pepper in 1/4 cup butter. Add parsley(optional), oregano and hot pepper sauce. When tender, remove from heat and add bread crumbs. Add clam mixture and pour into flat baking dish. Sprinkle with paprika and your cheeses(I tend to over cheese things, I think I use about 2 cups((8oz)) cheese. Bake at 350 degrees for 20 minutes or until cheese is very melted. Serve hot with crackers.
