1 (10-ounce) bag chopped romaine hearts

  • Preheat broiler. To make Parmesan crisp: place 3-inch ring mold on baking sheet. Sprinkle 1 tablespoon of shredded parmesan into mold. Repeat 3 more times so there are 4 separate parmesan disks. Lay out crisps on a foil covered pan. Place under broiler for 3 to 4 minutes watching carefully until Parmesan turns golden brown. Remove from broiler and let cool.
  • In a blender combine Caesar dressing, roasted garlic cloves and mayonnaise. Blend on medium speed until creamy.
  • In a large bowl, add romaine, 1/4 cup Parmesan and croutons. Toss with salad dressing.
  • Carefully peel Parmesan crisps from foil.
  • Serve on chilled plates with Parmesan crisps upright in salad.

1 cup extra virgin olive oil
1/4 teaspoon lemon juice

  • Wash and dry salad greens well and place them in a large bowl.
  • Add orange pieces, nuts, and onions.
  • Toss well with the Citrus Parmesan Dressing .
  • Add the avocado and toss the salad gently, so as not to mush the avocado.

A nice salad for company or for any night of the week. Lightly blanched broccoli and cauliflower (still warm), tossed with olives, onions, a creamy Parmesan dressing and topped with crisp bacon. If you want, blanch the broccoli and cauliflower ahead of time and keep in a ziplock container or bag until you are ready to serve. If you want to serve it warm, just reheat in the microwave. I also do the bacon ahead and just keep in a small ziplock bag or container. This is a great salad that you can do ahead. Then just toss and serve. And any leftover dressing is great over vegetables, chicken or just as a standby salad dressing.

2 1/2 cups broccoli, cut in bite size pieces
2 1/2 cups cauliflower, cut in bite size pieces
1 medium onion, cut in quarters and thin sliced
1 small fennel bulb, cut in half and thin sliced
1 cup kalamata olive, cut in half (I prefer kalamata, but black will work just fine, I wouldn't suggest green olives)
6 slices bacon, diced and sauteed until crisp
1/4 cup milk
1/2 cup mayonnaise
1/4 cup parmesan cheese, grated
1 teaspoon minced garlic (more if you want, according to your taste)
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1 teaspoon fresh parsley
salt
pepper
parmesan cheese, fresh grated

Steps:

  • Dressing -- In a small bowl, mix the milk, mayo, parmesan, lemon juice, worcestershire, parsley, salt and pepper. Refrigerate until ready for use.
  • Bacon -- In a small sauce pan over medium heat, saute the bacon until crispy and brown. Remove to a plate lined with a paper towel to drain. Keep for later.
  • Vegetables -- Bring a large pot of water to a medium rolling boil. Salt well. Add the broccoli and cook 3-4 minutes until slightly tender, not soft. We are just blanching them. Remove and immediately immerse to a bowl filled with ice water and ice cubes. You want to stop the cooking process and keep the bright green color. Remove after a minute or so and let drain on a paper towel lined plate.
  • Do the same for the cauliflower. Again, drain well.
  • Salad -- Now I prefer this salad room temperature or even warm, but you can easily serve this chilled. You can warm up the vegetables right in the microwave for just a minute or so, or you them as soon as they are blanched, or even just served them chilled. Either way, they are all equally as good.
  • Finish -- Just toss the broccoli, cauliflower, olives, fennel and onion in a medium size bowl, and mix to combine. Then add in a little dressing at a time until you reach the consistency you prefer. Some like it more creamy than others, so just add as much dressing as you like.
  • Serve -- Just garnish with the bacon and you can also add fresh grated parmesan if you want.
  • ENJOY!

1 cup fresh flat-leaf parsley, coarsely chopped
1/4 cup red wine vinegar
2 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
1/2 cup olive oil
1 Japanese eggplant, halved lengthwise
1 medium red onion, unpeeled, thickly sliced
1 red bell pepper
1 yellow squash, halved lengthwise
1 zucchini, halved lengthwise
Canola oil, for brushing
1/2 loaf ciabatta, split in half horizontally
12 cherry tomatoes, cored
2 ounces baby arugula or spinach
1/4 cup coarsely shredded Parmesan

Steps:

  • Heat a charcoal or gas grill to high.
  • Put the basil, parsley, red wine vinegar, garlic and some salt and pepper in a medium bowl. Whisk in the olive oil. Set aside.
  • Brush the eggplant, onion, pepper, squash and zucchini with canola oil on all sides and season with salt and pepper. Brush the cut side of the ciabatta with canola and season with salt and pepper.
  • Place the zucchini, squash and eggplant on the grill, flesh-side down. Place the onion slices and the pepper on grill. Cover and cook until the cut vegetables are charred, about 4 minutes; then flip and cook, covered, until they are tender, another 2 to 3 minutes. Transfer the cut vegetables to a cutting board. Cover the grill and continue cooking the pepper, turning occasionally, until it is charred all over and tender, about 10 minutes more. Remove the pepper to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes.
  • Put the tomatoes in a grill basket and grill, covered, shaking the basket occasionally, until charred and softened, about 5 minutes. Grill the ciabatta, cut-side down, until golden and toasty, about 3 minutes. Flip and grill 1 minute more. Transfer to the cutting board with the vegetables.
  • Seed and chop the bell pepper; remove the peels and coarsely chop the red onions; cut the zucchini, squash, eggplant and bread into 2-inch cubes. Combine the vegetables and bread in a large bowl, season with salt and pepper, and toss with some of the dressing. Mound the salad on a serving platter, top with some of the arugula, and drizzle with the remaining dressing. Scatter the Parmesan over the top, and serve immediately.

I am on a recipe hunt to find a Parmesan Peppercorn Salad Dressing similar to the one a local diner served - it was my husband's favorite salad dressing.
