Time 40m

Yield 6

Number Of Ingredients 10

1 cup Italian seasoned bread crumbs
½ cup panko bread crumbs
¼ cup Parmesan cheese
1 teaspoon seasoning salt (such as Mrs. Dash® garlic and herb)
1 teaspoon black pepper
1 teaspoon garlic powder
½ cup spicy ranch dressing, or to taste
½ cup buttermilk ranch dressing, or to taste
6 skinless, boneless chicken breasts
¼ cup melted butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine Italian bread crumbs, panko bread crumbs, Parmesan cheese, seasoning salt, pepper, and garlic powder in a bowl.
  • Combine spicy ranch dressing and buttermilk ranch dressing in a separate bowl. Dip chicken into dressing until both sides are coated, then coat in bread crumb mixture. Place chicken in a single layer on the prepared baking sheet, leaving space between pieces. Lightly drizzle chicken with melted butter.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

BUTTERMILK CHICKEN CAESAR SALAD

Buttermilk Chicken Caesar Salad image

Unlike traditional Caesar salad, ours uses no oil in the dressing. Instead, it relies on tangy low-fat buttermilk. Multigrain croutons also help save on calories and splurge on flavor.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 40m

Number Of Ingredients 11

1 1/2 cups low-fat buttermilk
2 tablespoons fresh lemon juice
1 garlic clove, pressed through a garlic press
1/4 cup grated Parmesan cheese
Coarse salt and ground pepper
3 boneless, skinless chicken breast halves (6 to 8 ounces each)
2 slices multigrain bread
1 tablespoon olive oil
1/4 cup light mayonnaise
2 medium heads (1 1/2 pounds total) romaine lettuce, cut into pieces
1/2 small head radicchio, thinly sliced

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. In a medium bowl, combine buttermilk, lemon juice, garlic, and Parmesan. Season with salt and pepper.
  • Place chicken in a resealable plastic bag; reserving 1/2 cup for salad, add buttermilk mixture. Refrigerate chicken at least 15 minutes and up to 1 day.
  • Meanwhile, make croutons: Place bread on prepared baking sheet. Brush both sides with oil, and season with salt and pepper. Broil until toasted, 1 to 2 minutes per side; cut into 1-inch pieces (and reserve baking sheet).
  • Transfer chicken to baking sheet; discard marinade. Broil until opaque throughout, 14 to 16 minutes. Let rest 5 minutes; thinly slice crosswise. In a large bowl, stir together mayonnaise and reserved buttermilk mixture. Add romaine, radicchio, chicken, and croutons; toss to combine. Serve immediately.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the dressing will taste. Use fresh herbs, good quality Parmesan cheese, and a flavorful buttermilk.
  • Don't overmix the dressing. Overmixing can make the dressing thick and gloopy. Stir just until the ingredients are combined.
  • Let the dressing sit for a while before using. This will allow the flavors to meld and develop.
  • Taste the dressing before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or lemon juice to taste.
  • Use the dressing on a variety of salads. It is great on a simple green salad, but it can also be used on more complex salads with roasted vegetables, grilled chicken, or fish.

Conclusion:

Parmesan buttermilk dressing is a versatile and flavorful dressing that can be used on a variety of salads. It is easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can make a delicious dressing that will elevate any salad.
