2 lbs frozen chopped spinach, thawed and drained
3/4 cup margarine
2 cups onions, chopped
1 cup celery, chopped
1 cup mushroom, sliced
3 cups carrots, shredded
1 1/2 cups matzo meal
6 eggs, beaten
1 teaspoon salt
1/2 teaspoon pepper
olive oil (cooking spray)

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion, celery and mushrooms in margarine for 10 minutes. Stir often. Place mixture into a large mixing bowl.
