2 c sour cream
2 Tbsp lemon juice
3/4 c sugar
1/8 tsp salt
1 can(s) (8 oz) crushed pineapple, drained
1/2 c maraschino cherries, chopped
1/4 c pecans, chopped
1 banana, peeled and sliced
1/2 c miniature marshmallows

Steps:

  • 1. In mixing bowl combine sour cream, lemon juice, sugar and salt. Stir in pineapple, cherries, pecans, banana and marshmallows.
  • 2. Spoon into 8 (4 oz) Dixie (or other) paper cups. Freeze until firm. Let thaw for a few minutes before serving. Goo-ood!

These are sooo good! Especially beautiful served during Easter or Christmas. I usually have some in the freezer so I can use them as a dessert if I'm pinched for time.

1- (8 1/4 oz) can crushed pineapple
1-(20) oz can crushed pineapple
1-(3) oz pkg lime gelatin
1 1/2 c miniature marshmallows
1 c butter mints, crushed
4 c whipped topping, thawed if using frozen

Steps:

  • 1. In large bowl, combine both cans of (undrained) pineapple, dry lime gelatin, marshmallows and mints. Cover and refrigerate for several hours or until marshmallows begin to melt.
  • 2. Fold in topping. Spoon mixture into 16 paper-lined muffin tins. Cover & freeze for at least 6 hours before serving.
  • 3. Pull off papers & serve on lettuce or spinach leaves. Garnish with fresh mint leaves, if desired.
