ROASTED RED PEPPER AND TOMATO SOUP WITH SMOKY CAPRESE PANINI

Roasted Red Pepper and Tomato Soup with Smoky Caprese Panini image

Provided by Rachael Ray : Food Network

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

2 large red bell peppers
2 tablespoons extra-virgin olive oil
2 garlic cloves, chopped
1 small carrot, peeled and chopped
2 small celery stalks, chopped
1 onion, chopped
Salt and freshly ground black pepper
1 (28-ounce) can or 2 (15-ounce) cans fire roasted diced tomatoes
2 cups chicken or vegetable stock
1-pound ball freshly smoked mozzarella, cut into 16 thin slices
1 large ripe tomato, cut into 8 thin slices
8 slices Tuscan bread
1/2 cup fresh basil leaves

Steps:

  • Char the peppers on all sides over an open flame on a gas stovetop or under a hot broiler (with the oven door cracked to avoid steam buildup in the oven). Put the charred peppers in a bowl, cover, and let them rest until cool enough to handle, about 10 minutes.
  • Meanwhile, heat the extra-virgin olive oil in a soup pot. Add the garlic, carrot, celery, and onions to the pot and season with salt and pepper, to taste. Cook until the vegetables soften, about 10 minutes, then put them into a food processor with the diced tomatoes. Seed and peel the peppers and add them to the processor. Puree the mixture until smooth, then pour it into soup pot and stir in the stock.
  • Heat a panini press or a large heavy skillet. Make sandwiches using 2 slices of cheese and 2 slices of ripe tomato on 4 of the bread slices. Sprinkle with salt and pepper, to taste, and top with some torn basil. Cover with the remaining 4 slices of bread and add them to the panini press or hot skillet. If using a skillet, top with a second smaller pan and weight it down with heavy cans. Press the sandwiches to toast and melt the cheese, a few minutes on each side or 5 minutes in a hot press.
  • Serve the soup in bowls with the Panini alongside.

Chicken and Roasted Pepper Panini image

This panini uses sub rolls, jarred roasted red peppers, olives and provolone cheese. You can also use leftover chicken for this sandwich. If you have a Panini Maker this will go even faster. From Cook's Country, July 2008.

Categories     Lunch/Snacks

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

8 boneless skinless chicken cutlets, thinly sliced
salt and pepper
4 tablespoons olive oil
1/2 cup roasted red pepper, drained and chopped
1/2 cup kalamata olive, pitted
1/2 cup fresh basil, chopped
1 garlic clove, minced
4 (6 inch) submarine rolls, halved lengthwise
8 ounces provolone cheese, thinly sliced

Steps:

  • Pat chicken dry with paper towels and season with salt and pepper. Heat 1 Tablespoon oil in large nonstick skillet over medium-high heat until just smoking. Cook half of cutlets until lightly browned and cooked through, 1 to 2 minutes per side. Transfer to plate and repeat with additional 1 Tablespoon oil and remaining cutlets.
  • Pulse red peppers, olives, basil, garlic and 1 Tablespoon oil in food processor until coarsely chopped. Spread pepper mixture evenly over both sides of rolls. Layer half of cheese and 2 chicken cutlets over each roll bottom. Top with remaining cheese and roll tops.
  • Wipe out skillet. Heat remaining oil over medium-low heat until just shimmering. Arrange panini in skillet and top with large Dutch oven. Cook until bottoms of sandwiches are crisp and cheese is beginning to melt, about 3 minutes. Remove Dutch oven, flip sandwiches, replace Dutch oven and continue to cook until crisp on second side and heated through, about 2 minutes. Serve.

Tips:

  • Use fresh, high-quality ingredients for the best flavour.
  • Roast the peppers until they are slightly charred and tender.
  • Use a good quality bread that will hold up to the filling.
  • Spread a thin layer of butter or olive oil on the bread before grilling.
  • Don't overload the panini with filling, or it will be difficult to grill.
  • Grill the panini until the bread is golden brown and the cheese is melted and gooey.
  • Serve the panini immediately with your favorite dipping sauce.

Conclusion:

The Panini with Roasted Peppers is a delicious and versatile sandwich that can be enjoyed for lunch, dinner, or even breakfast. The combination of roasted peppers, cheese, and bread is always a winner, and the panini press gives the sandwich a perfectly crispy exterior. You can also get creative with the fillings and add other ingredients like grilled chicken, bacon, or avocado. No matter what you choose, the Panini with Roasted Peppers is sure to be a hit.
