4 large baking potatoes, unpeeled
4 tablespoons good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 teaspoon minced fresh garlic
1 teaspoon minced fresh rosemary leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. 1 large baking potato... per person.. about 7-8 inches long.
olive oil
mrs dash...caribbean citrus...seasoning
salt & pepper
mayonnaise
panco...bread crumbs

Steps:

  • 1. Wash and scrub a baking potato. DO not peel. Cut length wise in half. Then cut in quarters. Then cut each quarter in half. This should give you 8 long fingers.( I had 9)
  • 2. Brush a little olive oil on potatoes. Then sprinkle with MRS Dash CARIBBEAN CITRUS seasoning. Put on a baking sheet in a pre-heated oven at 350F. Bake for 15 to 20 minutes. Turning once.
  • 3. Remove pan and brush mayonaise on warm potatoes, and roll in Panko crumbs. Place back in the oven,and bake for an aditional 15 to 20 minutes.Until soft centers. Turning over one time.
  • 4. When done. Remove from oven, place on a plate... with a small serving of mayonnaie mixed with MRS Dash Carribean CITRUS seasoning.. Serve and enjoy. Usually bake 1 potato per person.
