ULTIMATE PANCAKES USING BISQUICK

Ultimate Pancakes using Bisquick image

Me, tweaking the recipe on back of the box. I love pancakes and these fit the bill for me. I keep the pancakes warm by placing a clean dishtowel on a plate, add a double layer of paper towels the same length as dishtowel on top of the dishtowel. Place hot pancakes onto the papter towel. Fold both towels up over the hot pancakes...

Categories     Pancakes

Time 10m

Number Of Ingredients 8

2 c bisquick
2 tsp baking powder
2 Tbsp sugar (i use splenda)
1/2 tsp cinnamon
2 Tbsp lemon juice, fresh or bottled or can use vinegar
milk, amount is in directions
1 1/2 tsp vanilla
2 eggs, beaten

Steps:

  • 1. Place lemon juice in measuring cup and add enough milk to make 1 cup; let sit (abt. 5 mins.)while assembling other ingredients.
  • 2. In bowl mix together bisquick, baking powder, sugar and cinnamon. Add eggs, vanilla and milk mixture, stir until all ingredients are combined. Do not over mix.
  • 3. Heat griddle until a drop of water will dance across it. Brush about 1/2 tsp oil on griddle. (I only grease the griddle on the first batch, never after that.) Ladel pancake batter onto griddle. When bubbles appear and edges lose some of their shine it's time to flip and cook the other side. Cook until golden. Serve with butter and warm syrup or your favorite pancake toppings.

PERFECT BUTTERMILK PANCAKES

Perfect Buttermilk Pancakes image

Pancakes are the hero of the breakfast table, and their very taste can even be described as "deeply breakfasty": eggy, salty, just this side of sweet. A little indulgent and yet still somehow appropriate first thing in the morning, those fluffy stacks with crisped edges, dripping with maple syrup, are everything you want, exactly when you want them. Here is how to get to them right every time, whether it's a lazy Sunday morning or a hurried weekday.

Categories     breakfast, brunch, pancakes, main course

Time 10m

Yield 4 servings

Number Of Ingredients 9

2 cups all-purpose flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/4 teaspoons kosher salt
2 1/2 cups buttermilk
2 large eggs
3 tablespoons unsalted butter, melted
Vegetable, canola or coconut oil for the pan

Steps:

  • Heat the oven to 325 degrees. Whisk flour, sugar, baking powder, baking soda and kosher salt together in a bowl. Using the whisk, make a well in the center. Pour the buttermilk into the well and crack eggs into buttermilk. Pour the melted butter into the mixture. Starting in the center, whisk everything together, moving towards the outside of the bowl, until all ingredients are incorporated. Do not overbeat (lumps are fine). The batter can be refrigerated for up to one hour.
  • Heat a large nonstick griddle or skillet, preferably cast-iron, over low heat for about 5 minutes. Add 1 tablespoon oil to the skillet. Turn heat up to medium-low and using a measuring cup, ladle 1/3 cup batter into the skillet. If you are using a large skillet or a griddle, repeat once or twice, taking care not to crowd the cooking surface.
  • Flip pancakes after bubbles rise to surface and bottoms brown, about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside a rimmed baking sheet, and keep in heated oven until all the batter is cooked and you are ready to serve.

PANCAKES, BEST EVER, BISQUICK

Pancakes, Best Ever, Bisquick image

I came up with this variation of basic Bisquick pancakes, which I think are the best. At least, I've never tasted any better, except perhaps for some awesome sourdough pancakes I had in San Simeon, CA., on the Hearst Property.

Tips:

  • Use fresh baking powder and baking soda: Old baking powder and baking soda can lose their potency, resulting in flat pancakes. Check the expiration dates on your baking powder and baking soda before using them.
  • Don't overmix the batter: Overmixing the batter can result in tough pancakes. Mix the batter just until the ingredients are combined.
  • Let the batter rest for a few minutes: Letting the batter rest for a few minutes before cooking allows the gluten to relax, resulting in more tender pancakes.
  • Use a hot griddle: A hot griddle is essential for cooking pancakes evenly. Preheat your griddle to 375 degrees Fahrenheit before cooking the pancakes.
  • Grease the griddle lightly: Greasing the griddle lightly will prevent the pancakes from sticking. You can use butter, cooking spray, or a combination of the two.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat will help them cook evenly without burning them.
  • Flip the pancakes only once: Flipping the pancakes too often can make them tough. Flip the pancakes only once, when bubbles start to form around the edges.
  • Serve the pancakes immediately: Pancakes are best served immediately after they are cooked. You can keep them warm in a preheated oven or on a warming tray until you are ready to serve them.
