Time 42m

Number Of Ingredients 8

8-9 bone-in lamb loin chops, about 1-inch thick
2 teaspoons kosher salt adjust as needed
1 teaspoon freshly ground black pepper
2 tablespoons olive oil, for the pan
4 tablespoons salted butter
4 cloves garlic minced
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme

Steps:

  • Let the lamb chops sit at room temperature for 20 minutes. Pat dry and season the lamb chops with salt and pepper on all sides.
  • Heat a large cast iron skillet or other heavy pan on medium-high heat until very hot. Add the olive oil and heat for a minute, then carefully place the lamb chops in the pan, leaving a little space between them.
  • Cook for 3-4 minutes until seared on the bottom side, then flip with tongs and cook another 3-4 minutes on the other side to sear.
  • Reduce the heat to medium-low and add the butter, garlic, rosemary and thyme. Number Of Ingredients 4

6 to 8 loin lamb chops
4 cloves garlic, peeled and smashed
Kosher salt
Freshly ground black pepper to taste

  • Rub the lamb chops with the garlic and season aggressively with salt and pepper. If grilling, place on the hot side for 2 minutes per side. Move the chops to the cooler side of the grill to cook through, an additional 6 to 7 minutes. If using a grill pan, grill one side for 2 minutes to sear, then turn over the chops and place the pan in the oven for 5 to 6 minutes. Remove from the grill or oven and allow to sit 5 minutes before serving.

Tips:

  • Choosing high-quality lamb shoulder chops is essential. Look for well-marbled chops with a good amount of fat, as this will help keep them moist and flavorful during cooking.
  • Marinating the lamb chops in a flavorful marinade for at least 30 minutes, or up to overnight, will help tenderize them and infuse them with delicious flavors.
  • When grilling the lamb chops, make sure your grill is hot before adding them. This will help to create a nice sear on the outside of the chops, while keeping the inside tender and juicy.
  • Cook the lamb chops over medium-high heat for 3-4 minutes per side, or until they reach your desired level of doneness. Use a meat thermometer to ensure that the internal temperature of the chops has reached 145°F for medium-rare, 160°F for medium, or 170°F for well-done.
  • Allow the lamb chops to rest for a few minutes before serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful chop.

Conclusion:

Pan-grilled lamb shoulder chops are a delicious and versatile dish that can be enjoyed for lunch or dinner. With their tender texture and flavorful marinade, these chops are sure to be a hit with your family and friends. Serve them with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp salad, for a complete and satisfying meal.
