Time 15m

Yield 4 serving(s)

Number Of Ingredients 7

8 sole fillets
1/2 cup flour
1/2 teaspoon seasoning salt (or use white salt, or to taste)
1/4 teaspoon black pepper (or to taste)
7 tablespoons butter
1/4 cup fresh lemon juice
2 tablespoons chopped fresh parsley

Steps:

  • Mix the flour with seasoned salt and pepper in a shallow dish.
  • Dredge the fish fillets in the flour mixture.
  • Heat a large skillet over high heat.
  • Add in about 3 tablespoons butter to the hot skillet.
  • Saute the fillets in 2 batches, cooking on each side (on high heat about 2 minutes per side) or until just cooked through; transfer the fish to a plate to keep warm.
  • Add in the remaining 4 tablespoons butter and cook until golden in colour; add in lemon juice, bring to a boil and add in the parsley.
  • Season the sauce with salt and pepper.
  • Pour the warm sauce over the fish.
  • Serve immediately.

Tips:

  • Choosing a fresh flounder is essential to ensure a delicious dish. Look for fish with clear eyes, firm flesh, and a mild briny smell.
  • Before cooking, rinse the flounder fillets and pat them dry with paper towels to remove excess moisture, promoting crispy skin.
  • To achieve a golden-brown crust, use a well-seasoned cast iron or non-stick skillet over medium heat. Avoid overcrowding the pan, as this will hinder even cooking.
  • Cooking the flounder fillets for 3 to 4 minutes per side is the recommended time to maintain the fish's tender and flaky texture.
  • The lemon-butter sauce is a perfect complement to the flounder. Using fresh lemon juice and quality butter guarantees a delightful and flavorful sauce.
  • Garnish the cooked flounder fillets with chopped parsley or lemon slices for an appealing presentation.
  • Serve the pan-fried flounder with lemon-butter sauce immediately, accompanied by your favorite sides such as roasted vegetables, rice, or mashed potatoes.
