PAKISTANI CHICKEN KARAHI

This dish gets its name from a karahi, a flat open pot used a lot in Pakistani and Indian cooking. In spite of its name, this recipe can be made in any pot. My mom came up with this recipe; it's a little spicy (by Pakistani standards), but simple and foolproof. Serve with naan bread.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your karahi.
  • Marinate the chicken for at least 30 minutes: This will help the chicken to absorb the flavors of the spices.
  • Use a heavy-bottomed pot or karahi: This will help to distribute the heat evenly and prevent the chicken from burning.
  • Cook the chicken over medium heat: This will help to ensure that the chicken is cooked through without drying out.
  • Stir the chicken frequently: This will help to prevent it from sticking to the pot or karahi.
  • Add the tomatoes and onions towards the end of cooking: This will help to prevent them from becoming too mushy.
  • Garnish the karahi with fresh cilantro and green chilies: This will add a pop of color and flavor.
