- 1. Roast chicken stuffed w/ an onion and parsley for flavor.
- 2. After it's cooked, pull apart in large chunks and reserve broth to make gravy. I prefer to let my chicken sit overnight in fridge so that I can skim the fat from the broth off easily for the gravy, but you certainly don't have to.
- 3. Prepare waffles in waffle iron, whatever waffle mix or ingredients you choose to use. I use Bisquick and have always been happy with that. (Directions are on the box). I like my waffles nice & golden & w/ a crispness.
- 4. Use reserved chicken broth to make gravy, however you desire. I use Wondra flour for mine, and I usually add chicken bouillon for extra flavor & some poultry seasoning.
- 5. Put a waffle on a plate, add chicken, add another waffle, more chicken & then top w/ lotsa gravy. Salt & pepper to taste. I love lotsa fresh ground pepper on top. This is wonderful comfort food!

- Heat oil in a stew pan on high heat, sprinkle both sides of chicken with salt and pepper.
- Add to pan and brown both sides. Add the celery, carrot, onion, bay leaf and broth.
- Reduce heat to low. Cover and simmer until the chicken is tender, about 1 hour.
- Remove chicken from pot; cool and remove fat and bones and pull apart into small pieces.
- Skim excess fat from broth. Discard vegetables (or eat). Mix flour and water until smooth.
- Bring broth to a slow boil. Add flour-water paste gradually, stirring rapidly after each addition.
- Continue until gravy is the desired thickness and taste for seasoning.
- Add chicken and keep warm over very low heat.
- While cooking, make waffles according to recipe and waffle iron instructions.
- If necessary, place in a 200° oven to keep warm. Serve waffles with chicken and gravy.
