OZARK BAKELESS PUDDING (1953)

Ozark Bakeless Pudding (1953) image

This is one of a number of historical recipes I am posting from my cookbook collection. It is adapted from the 1953 edition of Adventures in Good Cooking, by traveling salesman and food critic Duncan Hines, and featuring recipes collected from around the USA. This recipe is from Hotel Taneycomo in Rockaway Beach, Missouri. If the use of raw eggs concerns you, use pasteurized eggs. The can size is a guess; the recipe specifies only a "small" can. Peaches may be substituted for the pineapple. Cooking time is chilling time.

OZARK PUDDING

Ozark pudding image

This is on of Elizabeth Virginia Wallace Truman. (Bess?) favorite recipes. This past week end husband and I took a week end trip into the hills of PA, while there I picked up a cook book called First Ladies Cook Book A very good book.Any way while discussing this in one of the groups I was asked to post this dish I have...

Number Of Ingredients 9

1 egg whole
3/4 c sugar
1 Tbsp flour
1 tsp baking powder
1/8 tsp salt
5 small raw apples peeled cored and diced
1 tsp vanilla extract
1/2 c chopped walnuts to garnish
1 pt heavy cream

Steps:

  • 1. beat egg and sugar a long time until very smooth and light.
  • 2. mix flour,baking powder,and salt
  • 3. Stir in the sugar and egg mixture, add apples, nuts, and vanilla.
  • 4. Bake in a buttered covered dish in a 350f oven for 35 mins or until apples are nearly tender
  • 5. Now remove cover to brown top
  • 6. serve pudding cold with whipped cream.Garnish with with chopped walnuts.

Tips:

  • For a richer flavor, use whole milk and heavy cream instead of low-fat or skim milk.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Be sure to whisk the eggs and sugar together until they are light and fluffy. This will help to create a smooth and creamy pudding.
  • If you don't have a double boiler, you can make the pudding in a regular saucepan over low heat, stirring constantly.
  • Once the pudding has thickened, remove it from the heat and let it cool slightly before stirring in the vanilla extract and butter. This will help to prevent the pudding from curdling.
  • Serve the pudding warm or cold, topped with whipped cream, fruit, or nuts.

Conclusion:

Ozark pudding is a delicious and versatile dessert that can be enjoyed by people of all ages. It is easy to make and can be customized to your own taste. Whether you like it plain, with fruit, or with nuts, Ozark pudding is sure to be a hit. So next time you are looking for a sweet treat, give Ozark pudding a try. You won't be disappointed!
