12 slices brioche, cut into 1-inch cubes
½ pound bacon, cut into 1/2-inch pieces, or more to taste
½ medium onion, finely chopped
1 green bell pepper, diced
8 medium eggs, or more to taste
1 ¼ cups milk
1 cup grated Cheddar cheese
1 teaspoon mustard powder
½ teaspoon ground black pepper
½ teaspoon salt

Steps:

  • Grease a 9x13-inch pan. Layer brioche cubes evenly in the prepared pan.
  • Cook the bacon in a skillet over medium heat, stirring occasionally, until it is cooked through, about 10 minutes. Remove from heat, including any rendered bacon fat, and allow to cool slightly, about 5 minutes.
  • Heat a small amount of bacon fat in the same skillet over medium-high heat. Saute onion and bell pepper until soft, 5 to 7 minutes.

3 tablespoons butter, divided
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups fat-free milk
5 slices reduced-fat American cheese, chopped
1-1/2 cups sliced fresh mushrooms
2 green onions, finely chopped
1 cup cubed fully cooked ham
2 cups egg substitute
4 large eggs
TOPPING:
3 slices whole wheat bread, cubed
4 teaspoons butter, melted
1/8 teaspoon paprika

Steps:

  • In a large saucepan, melt 2 tablespoons butter. Stir in flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until slightly thickened. Stir in cheese until melted. Remove from heat., In a large nonstick skillet, saute mushrooms and green onions in remaining butter until tender. Add ham; heat through. 6 -8 slices French bread, cut into 1/2-inch cubes (can substitute Sourdough Bread)
1 lb bacon, cooked and crumbled
1/3 cup spinach, cooked, chopped and well drained
1 1/2 cups cheddar cheese, shredded
5 large eggs, beaten
2 cups half-and-half
1 teaspoon salt
1 teaspoon dried mustard
3 scallions, chopped, for garnish (white and green parts)
1 tablespoon fresh parsley, chopped, for garnish

Steps:

  • Butter a 13 x 9-inch baking pan. Place bread cubes in baking pan. Add bacon and spinach. Top with cheese.
