Time 40m

Yield 4 servings

Number Of Ingredients 10

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

This is an easy and quick recipe for a midweek meal. The flavor is spicy but yummy. I use Emeril's Creole seasonings for the cajun spices. I love to serve this over rice and with a green vegetable or salad.

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 9

1 cup olive oil
3 tablespoons creole seasoning (try The Best Creole/Cajun Seasoning Mix for this)
1/4 cup lemon juice
1/4 cup chopped fresh parsley
2 tablespoons honey
2 tablespoons soy sauce
1 pinch cayenne pepper (optional)
salt (use only if you Cajun seasoning does not have salt in it)
2 lbs large raw shrimp, shelled and deveined

Steps:

  • Butter a 13 x 9-inch baking dish.
  • In a bowl combine the oil, Cajun seasoning, lemon juice, parsley, honey and soy sauce.
  • Pour over the shrimp and toss to coat; cover and chill for 1 hour.
  • Set oven to 450°F.
  • Bake the shrimp in the sauce/marinade for about 10 minutes, or until the shrimp are cooked through.
  • Serve with lemon wedges and crusty bread.

Tips:

  • Fresh is Best: For the best flavor and texture, use fresh shrimp. If frozen shrimp is all that's available, thaw it properly before cooking.
  • Proper Deveining: Devein the shrimp properly to remove any gritty or unpleasant textures. Make a shallow cut along the back of the shrimp and use a toothpick or small knife to remove the vein.
  • Seasoning Magic: Don't be shy with the Cajun seasoning! It's what gives this dish its signature flavor. You can adjust the amount to suit your taste preferences.
  • Spice It Up: If you like things extra spicy, add a pinch of cayenne pepper or red pepper flakes to the Cajun seasoning blend.
  • Crispy Perfection: For a crispy exterior, make sure the shrimp are dry before tossing them in the seasoning. Pat them dry with paper towels if necessary.
  • Don't Crowd the Pan: To ensure even cooking and prevent steaming, don't overcrowd the baking sheet. Spread the shrimp out in a single layer.
  • Watch the Cooking Time: Keep an eye on the shrimp during cooking to prevent overcooking. Overcooked shrimp become tough and rubbery.

Conclusion:

Oven-roasted Cajun shrimp is a quick, easy, and flavorful dish that's perfect for any occasion. With its crispy exterior, tender interior, and bold Cajun seasoning, it's sure to be a hit! Serve it as an appetizer, main course, or even as part of a seafood platter. Enjoy the taste of New Orleans in the comfort of your own home. Remember to use fresh shrimp, season liberally, and cook to perfection for the best results. Happy cooking and happy eating!
