Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 22

10 tablespoons butter
2 pounds boneless, skinless chicken thigh meat, cut into 2 -inch chunks
Salt and pepper
8 ounces andouille sausage, sliced
1 yellow onion, diced
2 garlic cloves, minced
2 carrots, peeled and cut into thick rounds
1 small fennel bulb, trimmed and sliced
2 sprigs fresh thyme
2 bay leaves
5 cups chicken stock
1 orange, zest grated
1/2 cup all-purpose flour
1/4 cup white wine
Oven roasted potatoes, recipe follows
10 medium red potatoes, washed and diced or 25 small potatoes
1/4 cup olive oil
2 teaspoons salt
1 teaspoon pepper
1 sprig fresh thyme
1 sprig fresh rosemary
1 tablespoon chopped parsley leaves

Steps:

  • Melt 6 tablespoons of the butter in a large, heavy bottomed stockpot over medium heat. Just before the butter begins to brown, add the chicken. Season with a little salt and pepper and cook until browned on all sides, about 8 minutes. Add the andouille and cook 2 more minutes. Remove the meat to a large dish and set aside.
  • Melt the remaining butter in the same pot. Add the onion, garlic, carrot, fennel, thyme and bay leaves and cook over medium heat until the onion turns translucent, about 20 minutes.
  • As the vegetables cook, pour the chicken stock into a large saucepan. Place over medium heat and bring to a simmer. Reduce heat to low.
  • When the vegetable mixture is ready, add the orange zest to the pot along with the reserved meat and any juices. Mix well. Add the flour and stir to coat the vegetables and meat. Cook 2 minutes. Add the wine and stir. The mixture will thicken immediately. Add the warm chicken stock to the pot 1 cup at a time, stirring as the stock is added. Once all of the stock has been used, bring the stew to a simmer for 20 minutes. Ladle into bowls and serve.
  • Preheat oven to 375 degrees F.
  • In a large bowl, toss the potatoes together with the oil, salt pepper, thyme, rosemary and parsley. Place the potatoes on a baking sheet and put into the top half of the oven. Roast 30 minutes, or until the potatoes are fork tender, golden brown and crispy. Remove from oven and serve as a bed for the stew.

Time 1h25m

Yield 8

Number Of Ingredients 15

2 pounds boneless, skinless chicken thighs
salt and ground black pepper to taste
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 cups chopped onions
3 cups chopped carrots
1 ½ cups chopped celery
1 (16 ounce) package fresh mushrooms, quartered
3 cups trimmed and chopped fresh green beans
2 tablespoons minced garlic
¾ cup dry white wine
3 cups chicken broth, or as needed
2 sprigs fresh rosemary, or to taste
3 tablespoons cornstarch
2 tablespoons water, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut each chicken thigh into 5 or 6 pieces. Lightly season with salt and pepper.
  • Heat oil and butter in a 6-quart, oven-safe Dutch oven over medium-high heat until hot. Add chicken pieces and cook until lightly browned but not cooked through, about 2 minutes per side. Remove chicken from the pot with a slotted spoon and set aside.
  • Add onions to the hot pot; cook and stir for 1 minute. Add carrots and celery; cook, stirring occasionally, for 1 more minute. Add mushrooms and cook for 1 minute. Add green beans and garlic; cook and stir until fragrant, about 2 minutes. Season lightly with salt and pepper to taste.
  • Pour wine into the pot and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add chicken and any accumulated juices back to the pot. Pour in just enough chicken broth to barely cover everything in the pot. Sample broth and adjust seasonings, if necessary. Add rosemary sprigs, pressing them below the surface of the liquid.
  • Cover and place in the center of the preheated oven. Bake until vegetables are tender and chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove rosemary sprigs.
  • Place cornstarch in a small bowl and add just enough water to create a thin paste. Stir until all lumps are dissolved and slowly add to the stew, stirring constantly.
  • Place stew on the stove and heat over medium heat. Cook and stir until gravy has thickened and desired consistency has been achieved, about 5 minutes.

Tips:

  • Choose the right chicken pieces: For this stew, bone-in, skin-on chicken thighs or drumsticks work best. The bones and skin add flavor to the stew, and the meat stays moist and tender during cooking.
  • Brown the chicken before stewing: Browning the chicken in a pan before adding it to the stew pot creates a flavorful crust that adds depth to the stew.
  • Use a variety of vegetables: This recipe calls for a mix of vegetables, including carrots, celery, onions, and potatoes. Feel free to add other vegetables that you like, such as parsnips, turnips, or green beans.
  • Use a flavorful broth: The broth is an important part of the stew, so use a good-quality broth that you enjoy the taste of. Chicken broth, vegetable broth, or a combination of the two all work well.
  • Season the stew well: Don't be afraid to season the stew generously with salt and pepper. You can also add other herbs and spices to taste, such as thyme, rosemary, or paprika.
  • Simmer the stew until the chicken is cooked through and the vegetables are tender: This usually takes about 30-45 minutes. Be patient and let the stew simmer until the flavors have had a chance to develop.
  • Serve the stew hot with your favorite sides: This stew is delicious served with mashed potatoes, rice, or crusty bread.

Conclusion:

This oven-chicken stew is a hearty and flavorful dish that is perfect for a cold winter night. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and satisfying meal, give this oven-chicken stew a try. You won't be disappointed!
