Coarse salt and freshly ground pepper
3 pounds russet potatoes, peeled and cut into 1 1/2-inch pieces (8 cups)
1/2 cup extra-virgin olive oil
1/2 stick unsalted butter, cut into small pieces
1 yellow onion, finely diced (1 cup)
Garnish: 1 to 2 rosemary sprigs

Steps:

  • Preheat oven to 425 degrees. In a large pot of salted boiling water, cook potatoes until just tender, 10 to 12 minutes. Drain. Let potatoes dry 10 minutes, then spread in an even layer on a rimmed baking sheet.
  • Drizzle potatoes with oil, and dot with butter. Taste a potato for seasoning. Add more salt if necessary, and season with pepper.
  • Roast potatoes until beginning to turn golden, 30 to 35 minutes. Distribute onion evenly over potatoes. Reduce heat to 400 degrees, and roast until potatoes are golden and onions are tender, 25 to 30 minutes. Garnish with rosemary.

1 (2 lb) bag frozen hash brown potatoes (thawed for 1 hour)
1 (10 ounce) can cream of chicken soup
1 (10 ounce) can cream of celery soup
1 cup sour cream
1 medium onion, grated (or chopped)
4 ounces cheddar cheese, grated
1/2 cup parmesan cheese

Steps:

  • Combine first 6 ingredients in large bowl. Transfer to a greased 9 x 13 pan. Sprinkle parmesan cheese over the top.
  • Bake at 375 deg F for 1 hour until lightly browned and bubbling.

1 (30-ounce) bag of Ore-Ida Country Style Hash browns, frozen
3 tablespoons olive oil
1 teaspoon salt
1 teaspoon cracked black pepper

Steps:

  • Start by preheating your oven to 375° F. Line your sheet tray with enough parchment paper to cover the top of the tray. Spread the hash browns out on the tray. When you are ready to serve, simply slide the hash browns off the parchment paper onto your plate or bowl, and dig right in.
