I got this recipe from a former coworker, whose father, a professional cook, made this for every family get-together and holiday. When he passed away, she took on the responsibility for providing this tasty treat for her family.

1 lb ground beef
1 lb hot bulk pork sausage
2 cups long grain rice, uncooked
2 (10 3/4 ounce) cans condensed cream of mushroom soup (cream of celery or cream of onion soup may be substituted)
1 3/4 cups water
1 cup green pepper, finely chopped
1 cup onion, finely chopped
salt and pepper, to taste

Steps:

  • Pinch all the ingredients together, with your fingers, in a large casserole dish.
  • Spread it all out into an even layer and bake, covered with foil, in a 350°F oven for 30 minutes.
  • After 30 minutes, remove the dish from the oven and stir/smoosh (breaking up the pieces of sausage and beef into itty-bitty tiny bits) and add a little more water if it looks dry.
  • Bake, uncovered, for an additional 30 minutes.

2 ¼ cups water
¼ cup butter
1 teaspoon salt
1 teaspoon white vinegar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter a 2 1/2-quart baking dish.
  • Pour rice into the prepared baking dish.
  • Stir water, butter, salt, and vinegar together in a saucepan; bring to a rolling boil. Pour the water mixture over the rice; stir.
  • Bake in preheated oven until the water is absorbed and the rice tender, 20 to 25 minutes.

2 tablespoons cooking oil
4 (6 ounce) pork chops
1 (1 ounce) package dry onion soup mix
3 cups water
1 cup uncooked white rice

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Heat the oil in a large skillet over medium heat; brown the pork chops on both sides. Remove the pork chops from the skillet, reserving the drippings in the skillet; add the onion soup mix and the water to the drippings; cook and stir until hot.
  • Spread the rice evenly into the bottom of a 2 quart casserole dish. Lay the pork chops atop the rice. Pour the mixture from the skillet over the pork chops and rice; cover.
  • Place covered dish in preheated oven and bake 45 minutes. Remove cover and bake until the pork is no longer pink in the center, another 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Delicious and easy to cook recipe that my mom found in the Houston Chronicle in the mid-1970's. So good that it's a family tradition in my house. You can play around with the ingredients some, but try not to deviate too much. Sometimes I might add about 1/4 pound of hot Italian turkey sausage to the ground beef, but the ground beef is normally the best. you will immediately want to cook another batch, it's so good. Use as much salt and pepper as you need, but don't exceed 1/2 tbsp.

1 (11 ounce) can French onion soup
