This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

32 oz package of hash brown potatoes (partially thawed)
2 10 oz. cans cheddar cheese soup
1 13 oz. can evaporated milk
1 3 oz. can french fried onion rings
salt & pepper to taste

Steps:

  • 1. Spray inside of the slow cooker with cooking spray. Add potatoes (I like to use the shredded hash browns vs. the cubed), soup, milk and onion rings (reserving 1/4 cup of the onion rings). Add salt and pepper to taste.
  • 2. Stir a little to combine. Cover and cook on LOW for 7-9 hours or HIGH about 3 hours. Sprinkle reserved onion rings over the top just before serving.

2 lbs Simply Potatoes® Shredded Hash Browns
1/2 cup melted butter
10 ounces cream of mushroom soup
8 ounces sour cream
1/2 cup chopped scallion
2 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 cup French's French fried onions
1/4 cup melted butter
1 teaspoon jalapeno (optional)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.
  • In a medium saucepan over medium heat, saute French's onions in 1/4 cup melted butter, and sprinkle the mixture over the top of the casserole.

I never liked hash brown casserole until I tried this recipe at my neighbors house. This comes out great every time and I can eat on it for a week by itself! I'm sure you could add in things like bacon, sausage, etc as well, but I never have. This makes a large casserole. I hope you enjoy this as much as I if you try it!

1 (14 ounce) bag frozen cubed hash brown potatoes (reg size, not sure of oz)
1 cup butter, melted (divided)
1 (10 1/2 ounce) can condensed cream of chicken soup (undiluted)
8 ounces sour cream
1 cup cheddar cheese
2 cups corn flakes

Steps:

  • Preheat oven to 350°F.
  • Grease a large casserole dish (I usually just spray with Pam).
  • Combine hash browns, 1/2 of the butter, soup, sour cream, and cheese. (I usually do this right in the cassarole dish). Note: I only use 1/2 the amount of butter the recipe calls for & use margarine with no ill effects.
  • In a separate bowl combine Corn Flakes and remaining 1/2 of butter.
  • Spread on top of casserole.
  • Bake at 350°F covered for 45 minutes and then uncovered for 15 minutes.
  • Let sit for 5 minutes after removing from oven.
  • Enjoy!
  • Note 2: I usually use reduced fat sour cream and soup in this with no ill effects. (Just to make it a little more "hip" friendly" -- lol).
  • Note 3: When reheating doing so in the oven maintains the crisp topping & makes it taste almost-freshly made :).

4 medium yukon gold potatoes or 4 medium white potatoes
1/2 onion, diced
3 slices bacon, chopped
1/4 cup sour cream
1/4 cup shredded cheddar cheese
pepper, to taste
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Place potatoes in a large saucepan and cover with cold water. Place on stove over medium-high heat. When water is boiling rapidly, turn off heat, cover pot, and let potatoes sit for 5 minutes. Carefully drain water and cool potatoes. You can refrigerate them, which will take a little while, or run them under cold water for 5-10 minutes (my preferred method).
  • Shred potatoes, set aside.
  • Heat large skillet over medium heat. Add chopped bacon. Cook for 2-3 minutes. Add onions. Cook until bacon is cooked and onions are browned, stirring occasionally, 5-6 minutes.
  • Add butter or margarine to skillet and let melt.
  • Add shredded potatoes and stir until onions and bacon are evenly distributed among the potatoes. Flatten with the back of the spatula and let sit until bottom is browned, 4-5 minutes.
  • Flip potatoes over. This does not need to be down perfectly. Cook another 4-5 minutes until potatoes are browned on both sides.
  • Add sour cream, cheese, and pepper. Stir until mixed. Flatten potatoes with spatula and cook a few minutes, until browned. Flip. Cook another few minutes. Serve warm.
  • Add additional cheese if desired.
