2 lbs ground beef, cooked and drained
1 (1 1/4 ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise or 4 ounces light sour cream
8 ounces cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix (I would find something else for this to many carbs!!!! )
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
  • In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
  • Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 inches greased casserole dish.
  • Saute remaining onions and bell peppers until slightly tender.
  • On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
  • Bake for 30-40 minutes or until edges of dough are lightly browned.

1 (16.3 ounce) can refrigerated biscuits
2 pounds ground beef
1 (1 ounce) package taco seasoning
¾ cup water
1 medium onion, halved and sliced
1 medium red bell pepper, halved and sliced (1 1/2 cups)
½ cup sour cream
½ cup mayonnaise
8 ounces shredded Cheddar cheese, divided
2 medium tomatoes, sliced
1 (4 ounce) jar sliced jalapeno peppers, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan.
  • Place and press biscuit dough into the bottom of the baking pan and halfway up the sides.
  • Bake in the preheated oven until lightly browned, 15 to 20 minutes. Leave the oven on.
  • Meanwhile, heat a nonstick skillet over medium-high heat and cook ground beef until browned and crumbly, about 5 minutes. Drain fat. Stir in taco seasoning and water. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 5 minutes. Transfer cooked meat to a bowl and wipe out the skillet.
  • Add onion and bell peppers to the same skillet and cook over medium heat until slightly tender, about 5 minutes.
  • Combine sour cream, mayonnaise, 1/2 of the Cheddar cheese, and 1/2 of the onions in a bowl.
  • Layer browned meat, tomatoes, pepper-onion mixture, jalapeno peppers, and sour cream mixture on top of the prebaked biscuit dough. Sprinkle with remaining Cheddar cheese.
  • Bake uncovered in the preheated oven at 350 degrees F (175 degrees C) until cheese is lightly browned and bubble, 30 to 40 minutes.

We just love John Wayne movies and a friend in Az. gave us this recipe John Wayne is famous around the Maricopa, Arizona, area as he was one of the owners of Red River Farms, a large feed lot near there.

8 ounces canned diced green chiles
1 lb monterey jack cheese, coarsely grated
1 lb cheddar cheese, coarsely grated
3/4 cup evaporated milk
4 eggs, separated
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 tomatoes, thinly sliced

Steps:

  • Preheat oven to 325 degrees F.
  • Mix chiles and cheeses and put into a buttered shallow casserole.
  • In a small bowl combine milk, egg yolks, flour, salt and pepper.
  • In a large bowl beat egg whites to stiff peaks.
  • Gently fold whites into the yolk mixture.
  • Then pour the mixture over the cheese and chile mixture and carefully blend.
  • Bake for 30 minutes.
  • Remove from oven and lay tomato slices over the entire top.
  • Return to oven and bake 30 minutes longer, or until an inserted knife comes out clean.
  • Garnish with a sprinkling of green chiles. Serves 8.
