Steps:
- Combine all ingredients except the chicken in a saucepan or flame-proof casserole, bring to boil over medium heat.
- Add chicken thighs, simmer for 2 minutes, turning the chicken to coat with sauce.
- Transfer pan/casserole to oven (preheated to 400°F/200°C) and bake uncovered for 40mins, turning once halfway through the cooking time.
- Sprinkle with shredded green onions and red chilli before serving with plain jasmine rice.
Tips:
- Choose the right chicken: Use a whole chicken or chicken pieces with skin and bones for best flavor.
- Make sure the chicken is dry before cooking: Pat the chicken dry with paper towels to help the marinade adhere and the skin crisp up.
- Use a flavorful marinade: The marinade in this recipe is a combination of soy sauce, Chinese rice wine, honey, and spices. You can also use other flavorful marinades, such as teriyaki sauce, hoisin sauce, or oyster sauce.
- Cook the chicken until it is golden brown and cooked through: The chicken should reach an internal temperature of 165 degrees Fahrenheit. You can check this by inserting a meat thermometer into the thickest part of the chicken.
- Let the chicken rest before serving: This allows the juices to redistribute throughout the chicken, making it more tender and flavorful.
Conclusion:
Oriental baked chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The marinade gives the chicken a flavorful and crispy crust, and the chicken is cooked to perfection. Serve the chicken with rice, noodles, or vegetables for a complete meal.
