TOPPING:
3/4 cup all-purpose flour
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
2 tablespoons chopped pecans
1/2 teaspoon ground cardamom
1/2 cup cold butter

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. 6 tablespoons cold water
FILLING:
5 cups sliced peeled fresh pears
1 tablespoon lemon juice
1/3 cup all-purpose flour
1/2 cup plus 1 tablespoon sugar, divided
1 teaspoon ground cinnamon
2 tablespoons butter

½ cup white sugar
3 tablespoons all-purpose flour
¼ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice

  • Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
