1/3 cup old-fashioned oats
1/4 cup packed brown sugar

Steps:

  • In a large saucepan over medium heat, cook sweet potatoes in boiling water until tender but still hold their shape, about 5 minutes; drain. Arrange in a buttered 2-qt. baking dish so slices overlap slightly. , In a saucepan, combine juice, butter, sugar, syrup, zest and spices; bring to a boil over high heat, stirring occasionally. 2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg
2 cups sweet potatoes, cooked, cold, mashed
1 tablespoon orange zest, minced
1 cup powdered sugar
2 teaspoons orange zest, minced
4 teaspoons orange juice (recipe calls for 3 to 5 teaspoons)

Steps:

  • FOR THE CAKE: Preheat oven to 350 degrees F, then grease & flour a 10-inch Bundt pan.
  • In a large mixing bowl, cream butter & sugar until light & fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in the vanilla.
  • In another bowl, whisk together flour, baking powder, cinnamon, baking soda, salt & nutmeg, then add this flour mixture to the butter mixture, a cup at a time, & alternating the flour mixture additions with a cup of sweet potato additions. 3 cups all-purpose flour
2 teaspoons baking powder

1 cup unsalted butter, softened

1 cup light brown sugar, packed
4 large eggs
1/2 cup buttermilk

Steps:

  • Preheat oven to 350. Grease and flour a 10-in tube pan with removable bottom. Tap out excess flour.

1 1/4 cups sugar
2 tablespoons cornstarch
1 teaspoon salt (or to taste, I use 1 tsp.)
2 cups orange juice
5 tablespoons butter
2 teaspoons orange zest
1 orange, thinly sliced (optional)

Steps:

  • Prepare and butter a shallow 3-quart baking dish.
  • Arrange the potato slices overlapping in rows in the baking dish; set aside.
  • In a small saucepan combine sugar, cornstarch and salt.
  • Stir in orange juice until well blended; bring to a boil, and cook stirring constantly for about 1 minute.
  • Remove from heat and add in butter, and orange peel, and mix until butter has melted.
