ORANGE SLICE CAKE

Orange slice cake image

This recipe came from my mother-in-law, I have no idea where she obtained the recipe. My entire family loves this cake and I only make it at Christmas so before Thanksgiving everyone starts asking me if I am making it this year.

Provided by Debbie McKinnis

Categories     Cakes

Time 2h30m

Number Of Ingredients 10

2 c sugar
1 c butter or oleo
4 eggs
3 c self rising flour
1 lb orange slice candy chopped
8 oz chopped dates
2 1/8 c chopped pecans or walnuts
1/2 c buttermilk
1 c orange juice
2 c powdered sugar

Steps:

  • 1. chop orange slice candy, add chopped dates and nuts stir in 1/2 cup flour (this keeps the ingredients from sticking together and sinking to the bottom of the pan)
  • 2. Preheat oven to 300 degrees, cream sugar, eggs, & butter together then add buttermilk and mix just until blended, add flour 1 cup at a time mixing well on low speed until all flour is incorporated then add candy, date and nut mixture folding into batter until well mixed. this is a thick batter. Bake in a well greased bunt pan or in loaf pans (bake time is shorter in loaf pans)
  • 3. After removing cake from oven while still hot mix powdered sugar and orange juice together and pour over cake, cover and place in refridgerator for 24 hrs. If baked in bunt pan after 24 hrs remove from fridge and invert on a cake plate at room temp until cake comes loose from bunt pan. Do not try to force this process your cake will break into pieces.

Tips:

  • Use fresh oranges. Fresh oranges provide the best flavor for this cake. If you can find organic oranges, even better!
  • Zest the oranges before juicing them. The zest contains a lot of flavor, so it's important to get as much of it as possible. Use a microplane zester or a fine grater to get the zest off the oranges.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean. This usually takes about 30-35 minutes.
  • Let the cake cool completely before glazing it. This will help the glaze set properly.
  • Store the cake in an airtight container at room temperature for up to 3 days.

Conclusion:

This orange slice cake is a delicious and easy-to-make dessert that's perfect for any occasion. The cake is moist and flavorful, with a sweet and tangy glaze. It's sure to be a hit with everyone who tries it!
