Time 20m

Yield about 2 1/2 cups

Number Of Ingredients 8

3/4 cup heavy cream
1/4 cup unsalted butter, sliced
Pinch of fine salt
1/2 cup sugar
2 tablespoons light corn syrup
2 tablespoons water
9 ounces good quality bittersweet, or semi-sweet chocolate, finely chopped
1 teaspoon pure vanilla extract

Steps:

  • In measuring cup with a spout, combine the cream, butter, and salt. Set aside.
  • In a medium saucepan, over medium heat, cook the sugar, corn syrup, and water, stirring, until the sugar is dissolved. Increase heat to high and bring the mixture to a full rolling boil. Cook until a dark amber color, about 1 to 2 minutes, without stirring. Remove the pan from the heat and carefully pour the cream mixture into the sugar mixture. (Take care, since the sugar will bubble up when the cream is added.) Whisk until smooth.
  • Put the chocolate in a large heatproof bowl. Pour the hot cream/sugar mixture over the chocolate. Add the vanilla and whisk until smooth. Serve the hot fudge sauce warm.
  • Store the sauce in an airtight container in the refrigerator for up to 2 weeks. Reheat over low heat before serving.

Categories     Dinner, Treat

Time 1h

Number Of Ingredients 13

750g golden caster sugar
1 cinnamon stick
2 strips lemon zest (use a potato peeler)
1 star anise
1 vanilla pod , split lengthways
5 cloves
piece fresh root ginger , peeled and sliced
4 ripe pears , peeled
200g good-quality dark chocolate
142ml double cream
150ml full-fat milk
pinch ground cinnamon
vanilla ice cream , to serve

Steps:

  • In a pan big enough to hold the pears snugly, tip in all the ingredients except the pears. Half fill the pan with water and bring to the boil. Simmer for 10 mins to infuse, drop in pears, cover and gently poach for about 30 mins until soft. Turn off the heat and set aside. The pears can be poached up to 2 days ahead and kept in the poaching syrup in the fridge.
  • To make the chocolate sauce, tip the chocolate into a heatproof bowl. Bring the cream, milk and cinnamon to the boil and pour over the chocolate. Stir until the chocolate has melted. To serve, drain the pears and, holding them by the stem, dip them in the chocolate sauce to completely cover. Serve each pear with a generous scoop of vanilla ice cream.

Tips:

  • Choose ripe, firm pears. Pears that are too soft will fall apart during poaching, while pears that are too hard will not soften properly.
  • Use a variety of pears. Different varieties of pears have different flavors and textures, so using a mix of pears will give your dish a more complex flavor.
  • Poach the pears in a flavorful liquid. The poaching liquid is what will give the pears their flavor, so make sure to use a liquid that you enjoy the taste of.
  • Simmer the pears gently. Do not boil the pears, as this will make them tough.
  • Allow the pears to cool in the poaching liquid. This will help them to absorb more of the flavor.
  • Serve the pears with a variety of toppings. You can serve the pears with whipped cream, ice cream, yogurt, or even crumbled cookies.

Conclusion:

Orange-Poached Pears with Fudge Sauce is a classic dessert that is perfect for any occasion. The pears are poached in a flavorful orange syrup and then served with a rich and decadent fudge sauce. This dish is sure to impress your guests, and it is also relatively easy to make. So next time you are looking for a special dessert, give Orange-Poached Pears with Fudge Sauce a try.
