1 c orange rind
1/2 c water
2 Tbsp granulated sugar
BREAD:

1 c granulated sugar
2 1/2 tsp baking powder
1 tsp salt
2/3 c milk
3 Tbsp melted butter
2 large eggs,beaten
3/4 c chopped pecans

Steps:

  • 1. In Advance: Grind the rinds of 3 oranges medium fine (use blender). Measure l cup into saucepan. Stir in the water and sugar. Cover and cook on low heat 10-15 minutes until most of the water is absorbed and it is syrupy but not dry. Set aside to cool. --- Bread: Sift flour, sugar, baking powder ans salt into mixing bowl. Add milk, butter and egg- mix until smooth. Stir in orange rind and pecans. Pour batter into 2 greased 9x5-inch loaf pans. Sprinkle tops with mixture of 1/2 teaspoon cinnamon and 2 Tablespoons sugar. Bake at 350^ about 60-65 minutes or until tested done with toothpick. Remove from pans after 5 minutes. Cool on wire rack.

Tips:

  • Mise en Place: Before you start baking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any unexpected delays.
  • Fresh Ingredients: For the best flavor, use fresh oranges and pecans. If possible, organic ingredients are always a good choice.
  • Zest the Oranges: When zesting the oranges, be sure to only remove the outer layer of peel. The white pith underneath is bitter and will make your bread taste bitter.
  • Cream the Butter and Sugar: Creaming the butter and sugar together until light and fluffy is essential for a tender and moist bread. Be sure to use unsalted butter so you can control the amount of salt in the recipe.
  • Gradually Add the Eggs: Add the eggs one at a time, beating well after each addition. This will help prevent the batter from curdling.
  • Do Not Overmix the Batter: Overmixing the batter will make the bread tough. Mix just until the ingredients are combined.
  • Use a Bundt Pan: A Bundt pan is the traditional pan for baking orange pecan bread. The fluted sides of the pan help to create a beautiful crust and allow for even baking.
  • Bake Until a Toothpick Inserted into the Center Comes Out Clean: The bread is done baking when a toothpick inserted into the center comes out clean. Be careful not to overbake, as this will make the bread dry.
  • Let the Bread Cool Completely Before Glazing: Allow the bread to cool completely before glazing it. This will help the glaze to set properly.
  • Enjoy!: Orange pecan bread is best served warm, but it can also be stored at room temperature for up to 3 days.

Conclusion:

Orange pecan bread is a classic quick bread that is perfect for any occasion. It is moist, flavorful, and has a beautiful golden crust. With its zesty orange flavor and crunchy pecans, it is sure to be a hit with everyone who tries it. Whether you are serving it for breakfast, brunch, or dessert, orange pecan bread is a delicious and easy-to-make treat that is sure to please.
